When you eat carbohydrates, your digestive system breaks them down into glucose, a simple sugar that enters your bloodstream. This causes your blood sugar levels to rise, which signals your pancreas to release insulin. Insulin acts like a key, allowing
glucose to enter your cells for energy. This entire process is normal. However, meals high in refined carbohydrates can cause a rapid, sharp increase in blood glucose, often called a "spike." Acetic Acid: The Active Ingredient

Secondly, some evidence suggests acetic acid can interfere with the enzymes, like alpha-amylase, that break down starches into sugar, further slowing absorption. A third proposed mechanism is that vinegar may improve insulin sensitivity in muscles, helping them draw glucose out of the blood more effectively.
Putting It into Practice Safely

Important Considerations and Who Should Be Cautious
While promising, this method is not a cure-all or a replacement for prescribed medical treatments, a balanced diet, or an active lifestyle. The effects, while statistically significant in studies, are modest. People with certain medical conditions should be cautious. For instance, because vinegar can slow stomach emptying, it may be problematic for individuals with gastroparesis, a common complication of diabetes. It can also interact with certain medications, including diuretics and diabetes drugs, potentially affecting potassium levels or causing blood sugar to drop too low.
