Recipe: Easy Roasted Ragi Chips

Ingredients: - 1 cup ragi flour - 2 tablespoons rice flour (for crispiness) - 1/2 teaspoon ajwain (carom seeds) or cumin seeds - 1/2 teaspoon red chilli powder - A pinch of turmeric powder - Salt to taste - 1 tablespoon oil - Warm water, as needed Instructions: 1. In a bowl, mix together the ragi flour, rice flour, salt, and all the spices. 2. Add the oil and rub it into the flour mix with your fingertips until it resembles breadcrumbs. 3. Gradually add warm water and knead to form a firm, smooth dough that isn’t sticky. 4. Divide the dough into small balls. Place a ball between two sheets of parchment paper and roll it out as thinly as possible. The thinner the dough, the crispier the chip. 5. Use a knife or pizza cutter to cut the rolled dough into triangle or diamond shapes. Prick them with a fork to prevent puffing. 6. Preheat your oven to 180°C. Ingredients: - 3 cups plain jowar puffs - 1 to 2 teaspoons ghee or coconut oil - 1/2 teaspoon mustard seeds - A pinch of asafoetida (hing) - 1/4 teaspoon turmeric powder - 1/2 teaspoon red chilli powder - Salt to taste - Optional: a handful of roasted peanuts or curry leaves Instructions: 1. Heat the ghee or oil in a wide pan over low-medium heat. Add the mustard seeds and let them splutter. Add the hing and curry leaves (if using). 2. Add the peanuts (if using) and roast for a minute. 3. Turn the heat to low, add the turmeric powder, chilli powder, and salt. Give it a quick stir. 4. Immediately add the jowar puffs to the pan. Toss everything together gently but quickly, ensuring the puffs are evenly coated with the spices. 5. Continue to roast for 2-3 minutes, stirring constantly, until the puffs are fragrant and extra crisp. 6. Turn off the heat and transfer the spiced puffs to a plate to cool down completely. This is crucial for them to stay crunchy. 7. Once cooled, store them in an airtight jar. They make for a perfect, light tea-time snack.
