The Modern Indian Salad Bowl
The concept of a 'salad bowl' as a complete meal has gained immense popularity, and for good reason. It’s a brilliant way to combine textures, temperatures, and flavours in one satisfying dish. While traditional Indian meals often feature a side salad like
kachumber, this recipe elevates it to the main event. The base is a simple, cooling cucumber salad, which gets a serious protein boost from roasted chana (chickpeas) and peanuts. Tying it all together is a creamy, zesty mint dressing that cuts through the richness and adds a layer of unmistakable Indian flavour. It’s a no-cook, or minimal-cook, marvel that feels both modern and deeply rooted in classic Indian tastes.
The Crisp and Cooling Base
The foundation of our salad is all about freshness. We're creating a variation of the classic kachumber salad, which typically features finely chopped cucumber, onion, and tomato. For this bowl, we'll keep it simple to let the other ingredients shine. Take two medium-sized cucumbers, peel them if you prefer, and dice them into small, even pieces. To this, add one finely chopped red onion. Rinsing the chopped onion under cold water for a few seconds can mellow its sharpness if you find it too strong. Toss the cucumber and onion with the juice of half a lemon, a pinch of salt, and a quarter teaspoon of roasted cumin powder. You can also add chopped tomatoes if you have them on hand. Let this mixture sit for a few minutes while you prepare the other components, allowing the flavours to meld together.
The Protein-Packed Crunch
Texture is key in a great salad, and that’s where the roasted chana and peanuts come in. They provide a deeply satisfying crunch and a healthy dose of plant-based protein. You can find pre-roasted chana, often sold as a snack, in most Indian grocery stores. Look for the plain or lightly salted variety. If you'd like to make your own, simply toss canned or boiled chickpeas with a teaspoon of oil and your favourite spices (like curry powder, paprika, or just cumin) and roast in a hot oven (around 200°C) until golden and crisp. For the peanuts, use raw, shelled peanuts and roast them in a 175°C oven for about 15-20 minutes until they smell nutty and are lightly browned. Let them cool completely before adding them to the salad to ensure they stay crunchy.
The Creamy Mint Dressing
The 'mint mayo' in the headline is our creamy, cooling element. While you can certainly use store-bought mayonnaise as a base, a healthier and more traditional approach is to make a mint yogurt sauce. It delivers the same creamy texture with a lighter, tangier profile. To make it, you’ll need a blender. Combine about a cup of thick yogurt (Greek yogurt works well), a large handful of fresh mint leaves, a smaller handful of fresh coriander, one green chilli (deseeded for less heat), a squeeze of lemon juice, a pinch of sugar, and salt to taste. Blend everything until it becomes a smooth, pale green sauce. If you prefer a richer, vegan alternative, you can blend soaked cashews with mint, lemon juice, and a little water until creamy. This dressing is the perfect counterpoint to the crunchy elements of the salad.
Assembling Your Masterpiece
Now for the fun part: bringing it all together. There are two ways to build your bowl. You can either combine everything in a large bowl and toss it together for a uniform mix, or you can create a more visually appealing layered bowl. For the layered approach, start with the cucumber salad at the bottom. This creates a moist base that catches all the flavours. Next, add a generous serving of the roasted chana and roasted peanuts, piling them in the centre or to one side. Finally, drizzle a generous amount of the creamy mint dressing over the top. Garnish with a few extra fresh mint or coriander leaves for a final touch of freshness. Serve immediately to enjoy the contrast between the cool, crisp cucumber and the warm, crunchy toppings.
