A Winter Tradition Reimagined
Kanji is a classic fermented beverage, traditionally made in North India during the winter and spring months. The star ingredient is the 'kali gajar' or black carrot, which gives the drink its signature deep purple hue. These carrots are chopped and submerged
in water with salt and coarsely ground mustard seeds ('rai'). This mixture is then left to ferment in the sun for several days, a process that transforms the simple ingredients into a complex, flavourful and healthful drink with a tangy, spicy kick. While black carrot is the authentic choice, variations using red carrots, beetroot, or even turnips are also common, making the drink accessible even when black carrots are not in season.
The Science of a Healthy Gut
The magic of kanji lies in lacto-fermentation. This natural process allows beneficial microorganisms, particularly species of Lactobacillus, to thrive. These microbes act as powerful probiotics, which are essential for maintaining a healthy gut microbiome. A balanced gut is crucial for overall wellness, as it aids in digestion, reduces issues like bloating and constipation, and improves nutrient absorption. Research has shown that about 70% of our immune cells reside in the gut. By nourishing the gut with probiotics, kanji helps support these immune cells, strengthening the body's natural defences against seasonal infections.
From Family Recipes to Urban Trend
While our grandmothers may have sworn by it, kanji is experiencing a modern revival in urban India. This renewed interest is driven by a larger wellness trend and a desire to reconnect with traditional food wisdom. In a world of processed foods, there's a growing appreciation for natural, homemade remedies. Social media has also played a role, with food bloggers and health enthusiasts sharing the vibrant visuals and benefits of this 'Indian Kombucha'. As people search for natural ways to boost immunity and improve their health, this age-old drink offers a simple, effective, and delicious solution that is easy to prepare at home.
More Than Just a Health Drink
While the health benefits are significant, kanji is also a delight for the palate. It has a unique flavour profile that is salty, tangy, and pungent from the mustard seeds. It's an acquired taste for some, but its refreshing quality makes it a perfect appetiser to stimulate digestion before a meal. The fermented carrots and beets can be eaten as a crisp, tangy pickle. Some even use the flavourful kanji water to dip urad dal vadas, creating a popular dish called Kanji Vada. This versatility ensures it is not just seen as a medicinal tonic but as a flavourful addition to the daily diet.
Your First Foray into Kanji
Making kanji at home is surprisingly simple. All you need is a clean glass or earthen jar, carrots, beetroot (for colour if using red carrots), mustard powder, salt, and water. The key is to allow it to ferment in a sunny spot for three to five days, depending on the temperature. Give the jar a shake each day. You'll know it's ready when it develops a tangy, slightly pungent aroma. Once fermented, it can be stored in the refrigerator to slow down the process and enjoy over the next week. The simplicity of its preparation makes it an easy habit to adopt for anyone looking to incorporate the power of fermented foods into their lifestyle.
