Start by heating a little oil in a pan. Add cumin seeds and let them sizzle before adding finely chopped onions, green chillies, and ginger-garlic paste. Sauté for about three minutes until the onions are translucent. Next, add chopped tomatoes and cook for another minute. Then, it's time for the spices: turmeric, red chilli powder, and coriander powder. Stir for a few seconds before adding the crumbled paneer. Mix everything well, cook for two more minutes, and your bhurji is ready. Garnish with fresh coriander and serve with toast or roti for a complete meal. Speedy Oats Chilla

In a bowl, combine a cup of oat flour with a quarter cup of gram flour (besan). Add finely chopped vegetables like onions, tomatoes, and capsicum. Season with salt, turmeric, cumin powder, and red chilli powder. Add water gradually to form a smooth, flowing batter—not too thick, not too runny. Heat a non-stick tawa or pan and lightly grease it. Pour a ladleful of the batter and spread it gently into a circle. Cook for about two minutes on each side until golden brown. These chillas are perfect on their own or served with a side of curd or chutney.
Instant Poha Perfection
Poha, or flattened rice, is a beloved breakfast dish across India, known for being light yet satisfying. For a quick version, choose the thick variety of poha. Place the poha in a strainer and rinse it quickly under running water. This softens it without making it mushy. Let it drain while you prepare the tempering. Heat oil in a pan and add mustard seeds. Once they pop, add curry leaves and chopped green chillies. You can also add chopped onions and peanuts, sautéing until the onions are soft. Add turmeric powder, followed by the drained poha. Mix gently, add salt and a squeeze of lemon juice, cover, and let it steam for about two minutes on low heat.
