An Indian Innovation in Nutrition
Developed by the ICAR–Central Potato Research Institute (ICAR-CPRI) in Shimla and officially released in 2024, the Kufri Jamunia is a biofortified potato variety. Biofortification is a process where scientists breed crops to increase their nutritional
value. This potato was specifically created to be richer in essential nutrients, with its most distinguishing feature being its deep purple skin and matching purple flesh, unlike earlier coloured varieties like Kufri Neelkanth, which has purple skin but cream-coloured flesh.
The Power of Purple: Anthocyanins
The defining nutritional difference of the Kufri Jamunia lies in its high concentration of anthocyanins, the same natural pigments that give blueberries, jamun, and red cabbage their colour. These compounds are powerful antioxidants. While a standard potato has negligible amounts, the Kufri Jamunia is packed with them, with its colour present throughout the flesh, not just the skin. Studies show that purple-fleshed potatoes can have up to twenty times the antioxidant power of regular white potatoes. This significant antioxidant boost helps the body combat oxidative stress by neutralizing harmful free radicals.
A Boost in Vitamins and Minerals
Beyond its antioxidant prowess, the Kufri Jamunia is loaded with other key nutrients. Official figures state that 100 grams of this potato contains about 42.75 mg of Vitamin C, 3.22 mg of iron, and 2.28 mg of zinc. This is a substantial increase compared to regular potatoes. This enhanced profile makes it a valuable tool in addressing 'hidden hunger', a condition where people consume enough calories but lack sufficient micronutrients in their diet.
Potential Health Benefits
The high anthocyanin content is linked to numerous health benefits. Research suggests these compounds may have anti-inflammatory properties, potentially helping to lower levels of inflammation in the body. Some studies also indicate that purple potatoes may be better for blood sugar management compared to other varieties. The polyphenol compounds in them can slow down the absorption of starches in the intestine, leading to a smaller spike in blood sugar after a meal. Furthermore, diets rich in anthocyanins are associated with improved cardiovascular health and better brain function.
Culinary Versatility and Taste
Nutritional advantages aside, the Kufri Jamunia is also a versatile ingredient in the kitchen. It is described as having a mealy texture and a pleasant, slightly earthy flavour. This makes it suitable for a wide range of traditional Indian dishes, from parathas and puris to curries and soups. Its vibrant colour can also be used to create visually appealing processed foods, like naturally coloured potato flour or snacks. Scientists have noted that cooking methods like steaming and microwaving tend to preserve more of the potato's nutrients compared to stir-frying.
