Proper storage is crucial for keeping your prepped ingredients fresh. It is best to store each component in separate airtight containers in the refrigerator. Cooked tofu will last for about four days. Cooked lentils also stay fresh for several days. By keeping the ingredients separate, you prevent them from becoming soggy and can combine them in different ways throughout the week to keep your meals interesting and texturally appealing. Unopened tofu should be kept in its original package in the fridge, but once opened, any unused raw tofu should be stored in a container of clean water that is changed daily.
