Carrot Kanji, or Gajar ki Kanji, is a traditional fermented beverage popular in North India, especially during the winter months and the festival of Holi. Its striking purplish-red color traditionally comes from black carrots, though red carrots and beetroot
are also commonly used. The taste is a unique combination of sour, pungent, and slightly spicy notes, an acquired but deeply refreshing flavour.
