The Evolution from Dalgona Coffee
If this sounds faintly familiar, you’re not wrong. Cloud coffee is widely seen as the spiritual successor to Dalgona coffee, the whipped instant coffee drink that became a global sensation during the 2020 lockdowns. However, there are key differences. Dalgona coffee requires whipping instant coffee, sugar, and water into stiff, intense peaks. Cloud coffee, on the other hand, often starts with a base of real brewed espresso or strong coffee and uses heavy cream or other agents to create a softer, more delicate foam. Some variations popularised on TikTok use coconut water as the base, topped with a frothed mixture of espresso and cream, blending the Dalgona concept with the previously trending iced coconut water Americano. Think of it as Dalgona’s more sophisticated, cafe-ready cousin—less about the sugary intensity and more about subtle creaminess.
A Nod to Viennese Tradition
While its current form is a product of modern social media trends, the idea of topping coffee with a thick layer of cream is far from new. The drink has clear influences from the classic Viennese Einspänner. Originating in 19th-century Vienna, the Einspänner consists of strong espresso served in a glass, topped with a generous dollop of whipped cream. The name, which means "one-horse carriage," refers to the carriage drivers who could hold the glass in one hand while the cream kept the coffee warm and prevented spills. This classic combination of strong, hot coffee and cool, thick cream has now been re-popularised and adapted for the iced coffee generation.
