Finding exciting plant-based meals that are genuinely high in protein can be a challenge. Tofu, paneer, and lentils offer a versatile and potent solution. Tofu, made from soybeans, is a complete protein containing all nine essential amino acids and is low
in calories. Paneer, a fresh Indian cheese, provides a rich texture and is packed with protein and calcium. Lentils, a staple in many cuisines, are an excellent source of protein, fibre, and essential nutrients. Together, they create a balanced nutritional profile, offering varied textures and absorbing flavours beautifully, making them ideal for a range of satisfying dinner dishes.
Hearty Tofu, Paneer and Lentil Curry
Imagine a rich, fragrant curry where every spoonful is loaded with texture and flavour. This dish combines the best of all three ingredients in a single pot. To create it, start by pan-frying cubes of paneer and pressed extra-firm tofu until golden brown. Set them aside. In the same pan, create a flavour base by sautéing onions, ginger, and garlic. Add spices like turmeric, cumin, and garam masala, followed by a can of chopped tomatoes and cooked lentils (green or brown work well). The lentils help to naturally thicken the gravy, creating a hearty base. Stir in a splash of coconut milk for creaminess, then return the tofu and paneer to the pot. Simmer for a few minutes to allow the flavours to meld, and finish with fresh coriander. Serve with basmati rice or naan for a complete, protein-rich meal.
Roasted Protein Skewers with Lentil Salad
For a lighter, yet equally satisfying meal, try combining these ingredients in a fresh and vibrant format. Marinate cubes of firm tofu and paneer in a mixture of yogurt (or a vegan alternative), lemon juice, garlic, ginger, and spices like turmeric and cumin. Thread them onto skewers, perhaps with chunks of bell pepper and onion, and roast or grill until they are browned and slightly crisp. While the skewers are cooking, prepare a simple lentil salad. French green lentils are a great choice as they hold their shape well when cooked. Toss the cooked and cooled lentils with chopped cucumber, cherry tomatoes, fresh mint, and a simple lemon-tahini dressing. To serve, lay the warm skewers over a bed of the cool lentil salad for a delightful contrast of temperature and texture.
Layered Protein Bake
This dish takes inspiration from a classic shepherd's pie but gives it a plant-based, protein-forward twist. The base layer is a flavourful mixture of cooked red lentils and crumbled tofu, seasoned with herbs like thyme and rosemary, and mixed with sautéed vegetables like carrots, peas, and onions. For the topping, instead of a simple potato mash, create a richer version by mashing cooked potatoes with grated or crumbled paneer and a bit of milk or cream. This adds an extra dose of protein and a wonderful cheesy flavour. Spread the paneer-potato mixture over the lentil-tofu base in a baking dish. Bake in the oven until the top is golden brown and the filling is bubbly. It’s a comforting, wholesome, and incredibly filling one-dish meal that proves how well these three ingredients can work together in creative ways.
