How to Brew Kokum Cooler
Making a vibrant kokum concentrate at home is simple. You'll need about 15-20 pieces of dried kokum, a sweetener like jaggery or sugar, and a few spices.First, rinse the dried kokum pieces and soak them in about two cups of warm water for at least an hour, or until the rinds are soft. Once softened, you can either blend the mixture into a fine paste or simmer it on low heat for about 15 minutes to extract the colour and flavour.Next, strain the liquid into a pan. Add about half a cup of jaggery or sugar and stir until it dissolves completely. To elevate the flavour, add a pinch of black salt and half a teaspoon of roasted cumin powder. Let the mixture simmer for another five minutes until it thickens slightly into a syrup. Once it cools, you can store this concentrate in a bottle in the refrigerator. To serve, simply mix a few tablespoons of the concentrate with chilled water or soda, add ice, and garnish with fresh mint leaves.
