The Classic One-Pot Khichdi
Khichdi is the undisputed king of comfort food, especially on a rainy day. Made with a simple combination of rice and lentils, this dish is nourishing, easy to digest, and incredibly versatile. The best part is that it comes together in a single pressure
cooker or pot. Start by tempering cumin seeds and ginger in ghee, then add your washed rice and moong dal, turmeric, and salt. You can elevate this humble dish by adding seasonal vegetables like carrots, peas, and cauliflower, turning it into a complete and wholesome meal. Everything from the spices to the vegetables, rice, and dal cooks together, meaning you are left with just one pot to wash. Serve it hot with a dollop of ghee, a side of yoghurt, and some pickle.
A Hearty Bowl of Thukpa
This Tibetan noodle soup is a perfect one-bowl meal to warm you up on a chilly, damp evening. Thukpa is a flavourful broth filled with noodles, vegetables, and sometimes chicken or paneer. It’s a fantastic way to use up whatever vegetables you have in your fridge. The entire dish, from sautéing the aromatics like ginger and garlic to simmering the broth and cooking the noodles, can be done in a single large saucepan. You begin by creating a flavour base with aromatics, add vegetable stock, then toss in your choice of vegetables and noodles. The result is a steaming, hearty soup that serves as a full dinner, leaving you with just the soup pot and your bowls to clean.
Effortless Foil-Baked Sabzi
For a truly zero-mess cooking experience, embrace the foil packet method. This technique involves sealing your ingredients in aluminium foil and baking them, which traps steam and flavour, cooking the food perfectly with minimal intervention. Chop potatoes, carrots, bell peppers, and paneer or chicken, and toss them with Indian spices like turmeric, garam masala, and paprika. Place the mixture in the centre of a sheet of foil, drizzle with a little oil, and seal the packet tightly. Bake in a preheated oven for about 25-30 minutes. The vegetables become tender and the paneer or chicken remains succulent. The biggest advantage is the cleanup: once you are done, you simply discard the foil. No scrubbing of baking trays required.
Quick Paneer or Egg Bhurji
When you need dinner on the table in under 20 minutes with just one pan, bhurji is the answer. Whether you choose crumbled paneer or scrambled eggs, the process is simple and contained. Heat some oil in a pan, sauté onions, tomatoes, and green chillies, add your spices, and then toss in the paneer or eggs. Cook until done, stirring occasionally. This versatile dish can be scooped up with hot rotis or stuffed into pav. It’s a protein-packed meal that is both satisfying and incredibly quick to prepare, ensuring your time in the kitchen is short and the cleanup is limited to a single pan and a spatula.
Wholesome Vegetable Pulao
Similar to khichdi, a vegetable pulao is another fantastic one-pot rice dish that is both flavourful and filling. Unlike biryani, which often requires multiple steps and pots, a good pulao can be made entirely in one pressure cooker or heavy-bottomed pan. Start by frying whole spices like cumin seeds, cloves, and cardamom in oil or ghee. Add sliced onions and ginger-garlic paste, followed by your favorite chopped vegetables—potatoes, green beans, carrots, and peas are all great additions. Sauté for a few minutes, then add the soaked rice, water, and salt. Cover and cook until the rice is fluffy and the vegetables are tender. It’s a complete meal that requires very little monitoring and leaves you with minimal washing up.
