A New Scoop on the Block
The Indian dessert market, long dominated by dairy-heavy kulfis, mithais, and mass-market ice creams, is experiencing a quiet revolution. A growing number of consumers are seeking alternatives that are healthier, ethically produced, and cater to dietary
needs like lactose intolerance. Answering this call are savvy entrepreneurs who are crafting artisanal, plant-based gelato. This isn't just about removing dairy; it's about creating a premium, indulgent experience using innovative ingredients. According to recent reports, the vegan food market in India is valued at over a billion dollars, with desserts becoming a significant growth area. This has paved the way for brands to position gelato not as a compromise, but as a gourmet product in its own right.
Meet the Gelato Innovators
Several homegrown brands are leading this charge. Minus 30, founded by sisters Shivanie Mirchandani and Gayatri Rattha, turned a family recipe into a thriving business. Inspired by their mother's homemade ice creams, Gayatri trained professionally in Italy to master the art of gelato making. The brand, which now offers an extensive range of vegan and sugar-free options, is available in over 300 stores across the country. Another key player is Papacream, launched by Tanvi Chowdhri, who combined her background in engineering with a passion for food. The brand has gained a loyal following for its creative flavours and vegan offerings, even collaborating with celebrities like film producer Rhea Kapoor to launch exclusive lines. Brands like Nomou, founded by the creators of Vegan Bites, focus on unique Indian-inspired flavours like Paan and Thandai gelato, earning accolades such as a PETA Vegan Food Award.
The Art of Dairy-Free Creaminess
Creating a creamy, rich gelato without milk, cream, or eggs is a significant technical challenge. These entrepreneurs have turned to a variety of plant-based milks to achieve the desired texture and taste. Coconut milk and almond milk are popular choices for their natural creaminess and ability to carry flavour. Other innovators are using oat milk and cashew milk to build a smooth base. Nomou, for instance, uses a coconut milk base combined with nuts like almonds and cashews to make their gelato denser and creamier. To appeal to health-conscious consumers, many brands are also avoiding refined sugar, opting instead for natural sweeteners like dates or jaggery. This focus on clean-label ingredients is a key differentiator in the premium market.
More Than a Niche: The Driving Forces
The rise of plant-based gelato is fueled by powerful consumer trends. An increasing awareness of lactose intolerance in India is a major driver, pushing many to seek dairy-free desserts. Alongside this is a growing consciousness around health and wellness, with consumers looking for products with natural ingredients and fewer artificial additives. The global movement towards veganism and sustainable food choices also plays a crucial role. This shift is not just confined to those following a strict vegan diet; a larger group of 'flexitarian' consumers are actively reducing their dairy intake. Indian entrepreneurs have recognised that this is no longer a niche market but a substantial and growing consumer base willing to pay a premium for high-quality, thoughtfully made products.
The Business of Premium Indulgence
Positioning these products as 'premium' is a deliberate strategy. Brands are investing in high-quality ingredients, sophisticated flavour profiles, and appealing packaging to attract urban consumers with higher disposable incomes. The flavours themselves often blend global trends with local tastes, offering everything from classic Dark Chocolate to inventive options like Masala Chai or Saffron Pistachio. Distribution has also been key to their success. While physical parlours and supermarket placements are important, many of these brands have leveraged e-commerce and quick-commerce platforms like Swiggy and Big Basket to reach a wider audience across multiple cities. This direct-to-consumer approach has allowed them to build a strong brand identity and cultivate a loyal customer base.
