The Easiest Greens to Start With

The key is to take only what you need, never removing more than a third or half of the plant's leaves at once. This method not only extends your harvest but also reduces food waste, as you pick greens at their peak freshness right before you eat them.
Level Up with Microgreens
For the absolute fastest results, nothing beats microgreens. These are simply young vegetable greens harvested just after the first true leaves have developed. They are packed with flavour and nutrients and can be grown on any sunny windowsill in a shallow tray—even a recycled takeout container will do. To start, fill a tray with a few centimetres of moist potting mix, sprinkle seeds like mustard, radish, or basil densely on top, and lightly cover with more soil. Mist daily, and within a week or two, you’ll have a tiny forest of flavourful shoots ready to be snipped with scissors and added to salads, sandwiches, or curries.
