Effortless Coconut Ladoo
Coconut Ladoos are perhaps
one of the simplest yet most delightful sweets to make for any festival. Their snowy appearance and soft, chewy texture are an instant hit. This quick recipe uses condensed milk, which cuts down the cooking time significantly, making it perfect for a last-minute festive preparation. The richness of coconut combined with the creamy sweetness of condensed milk creates a treat that melts in your mouth. You can have a batch of these ready in under 20 minutes, leaving you more time to spend with your brother. Ingredients: - 2 ½ cups desiccated coconut (plus extra for rolling). - 1 can (approx. 400g) sweetened condensed milk. - 1 tsp cardamom powder. - 1 tbsp ghee (for greasing hands). - Chopped pistachios or almonds for garnish (optional). Method: 1. In a heavy-bottomed pan, combine the desiccated coconut and condensed milk. 2. Cook the mixture on a low to medium flame, stirring continuously to prevent it from sticking or burning. 3. After about 5-7 minutes, the mixture will start to thicken and come together, pulling away from the sides of the pan. 4. Stir in the cardamom powder and mix well. Turn off the heat and let the mixture cool down slightly until it is warm enough to handle. 5. Grease your palms with a little ghee, take small portions of the mixture, and roll them into smooth, round balls. 6. Roll each ladoo in the extra desiccated coconut until it is evenly coated. Garnish with a piece of pistachio or almond if desired. Let them set for an hour before serving.
Classic Besan Ladoo
Besan Ladoo is a timeless classic, a staple in festive celebrations across India. The nutty aroma of gram flour (besan) slowly roasted in ghee is the very essence of festival cooking. While it requires a bit of patience, the result is a rich, granular, and incredibly flavourful sweet that is worth every minute. The key to a perfect Besan Ladoo lies in roasting the besan properly on a low flame until it turns a beautiful golden-brown and releases its characteristic nutty fragrance. Ingredients: - 2 cups besan (gram flour). - ¾ cup ghee. - 1 cup powdered sugar. - ½ tsp cardamom powder. - 2 tbsp chopped nuts (almonds, pistachios). Method: 1. Heat the ghee in a heavy-bottomed pan or kadai on low flame. Add the besan and begin to roast it. 2. Stir continuously to ensure the besan roasts evenly and does not burn. This process will take about 20-25 minutes. Initially, the mixture will be thick, but as it roasts, it will loosen up and become more liquid. 3. Continue roasting until the besan turns a golden-brown colour and your kitchen is filled with a rich, nutty aroma. 4. Turn off the flame and transfer the mixture to a separate bowl or plate to cool down completely. This step is crucial; adding sugar to hot besan will cause it to melt and ruin the texture. 5. Once the mixture has cooled to a lukewarm temperature, add the powdered sugar, cardamom powder, and chopped nuts. 6. Mix everything well with your hands until fully combined. Take small portions and shape them into firm, round ladoos. Store them in an airtight container.
