The Allure of the 'Queen of Spices'
Known as the 'Queen of Spices', cardamom holds a cherished place in Indian kitchens and culture. Native to the lush forests of India's Western Ghats, this aromatic spice has been treasured for centuries, not just for its flavour but for its role in rituals
and traditional medicine. Its unique taste—a complex blend of sweet, floral, citrus, and minty notes—makes it incredibly versatile. While many associate it with savoury dishes like biryani or a comforting cup of masala chai, its profile shines exceptionally well in sweet preparations, adding a layer of sophistication and warmth that is hard to resist. The moment you crack open a green cardamom pod, you release an aroma that promises something delicious is on its way.
Green vs. Black Cardamom
Before you start baking, it’s helpful to know which cardamom to use. There are two main types: green and black. Green cardamom, or 'choti elaichi', is the variety you want for desserts. It has a potent, sweet, and floral flavour and is the most common type found in Indian households. Black cardamom, or 'badi elaichi', is much larger and has a smoky, more intense profile, making it better suited for robust, savoury dishes like stews and rich curries. For our cookies, we'll be using ground green cardamom to ensure that classic, fragrant sweetness comes through in every bite. Using freshly ground seeds from the pods will always give you the most vibrant flavour.
A Simple Recipe for Cardamom Cookies
This recipe creates wonderfully soft, chewy cookies with crisp edges and a delightful cardamom essence. Ingredients: - 2 ½ cups all-purpose flour - 1 ½ teaspoons ground green cardamom - 1 teaspoon baking soda - ½ teaspoon salt - 1 cup unsalted butter, at room temperature - 1 ½ cups granulated sugar - 1 large egg - 1 teaspoon vanilla extract - Extra sugar for rolling (optional) Instructions: 1. Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper. 2. In a medium bowl, whisk together the flour, ground cardamom, baking soda, and salt. Set this aside. 3. In a separate large bowl, using an electric mixer or by hand, beat the softened butter and sugar together until the mixture is light and fluffy. This usually takes about 2-3 minutes. 4. Beat in the egg and vanilla extract until they are just combined. 5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed or stirring until a soft dough forms. Be careful not to overmix. 6. Take about two tablespoons of dough and roll it into a ball. If you like, you can roll the ball in a small bowl of granulated sugar for an extra crunchy exterior. 7. Place the dough balls on the prepared baking sheets, leaving about 2 inches of space between them as they will spread. 8. Bake for 10-12 minutes, or until the edges are golden brown and the centres are set. 9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Beyond the Cookie Jar
Baking cookies is a fantastic way to appreciate cardamom, but its uses are nearly endless. Once you fall in love with its flavour, you'll want to add it to everything. Try stirring a pinch of ground cardamom into your morning coffee, tea, or oatmeal for an instant upgrade. You can also add whole pods to your pot when cooking rice to infuse it with a subtle, aromatic fragrance. It’s a key ingredient in many spice blends like garam masala and chai masala, which are staples in Indian cooking. For another sweet application, consider making a simple cardamom-infused syrup to pour over fruit salads, pancakes, or even to flavour a homemade whipped cream.
