The Secret to Effortless Curries
The desire for a home-cooked Indian meal often clashes with the reality of a busy weeknight. The process of chopping onions, mincing ginger and garlic, and slowly cooking down tomatoes to build that essential depth of flavour takes time. But what if you
could do all that foundational work just once and reap the benefits for weeks? This is the magic of a versatile curry base, often called an onion-tomato masala or bhuna masala. It's a concept used by restaurants to serve a wide variety of curries quickly without starting from scratch each time. By preparing a large batch of this flavour-packed foundation, you can store it in your fridge or freezer, ready to transform into a myriad of dishes at a moment's notice.
Your Go-To Curry Base Recipe
This all-purpose base is the heart of countless North Indian dishes. The key is slowly caramelising the onions to develop a deep, sweet flavour, then cooking the aromatics and tomatoes until the oil begins to separate from the masala—a visual cue that the base is ready.
Ingredients:
- ½ cup neutral oil or ghee
- 5-6 large onions, finely chopped or pureed
- 2 tbsp ginger-garlic paste
- 8-10 ripe tomatoes, pureed
- 1 tsp turmeric powder
- 1 tbsp red chilli powder (adjust to taste)
- 2 tbsp coriander powder
- Salt to taste
Instructions:
1. Heat oil in a large, heavy-bottomed pan. Add the onions and cook on medium-low heat, stirring frequently, until they are soft, translucent, and golden brown. This can take 20-30 minutes but is crucial for the flavour.
2. Add the ginger-garlic paste and sauté for another 2-3 minutes until the raw smell disappears.
3. Stir in the turmeric, chilli powder, and coriander powder, cooking for one minute until fragrant.
4. Pour in the tomato puree and add salt. Cook, stirring occasionally, for 20-25 minutes, until the mixture thickens and you see oil separating at the edges of the pan.
5. Let the base cool completely. You can store it in an airtight container in the refrigerator for up to a week or freeze it in portions (ice cube trays are great for this) for up to three months.
Variation 1: Quick Chana Masala
For a hearty, plant-based meal, a flavourful chickpea curry is a classic choice. To make it using your pre-made base, simply heat about 1 cup of the base in a pan. Add a can of drained and rinsed chickpeas, a teaspoon of chana masala powder, and about half a cup of water. Let it simmer for 10-15 minutes for the flavours to meld together. Finish with a squeeze of lemon juice and a sprinkle of fresh coriander. You’ll have a delicious chana masala ready in the time it takes to cook some rice.
Variation 2: Creamy Paneer Curry
To create a restaurant-style paneer dish, start by heating a cup of your curry base. You can enhance it by adding a spoonful of cashew paste for extra richness. Stir in cubes of paneer and about half a cup of water or milk to create a gravy. Let it simmer for about 5-7 minutes until the paneer is soft. To finish, stir in a splash of cream or a dollop of yogurt, a pinch of garam masala, and some crushed kasuri methi (dried fenugreek leaves) for that signature aroma.
Variation 3: Simple Chicken Curry
This base is also perfect for a quick chicken curry. You can either use pre-cooked chicken or quickly sauté bite-sized pieces in a separate pan until lightly browned. Heat about 1.5 cups of the curry base in a pot, add the chicken, and stir to coat. Add about a cup of water or chicken stock to achieve your desired gravy consistency. Cover and simmer for 15-20 minutes, or until the chicken is cooked through and tender. A final sprinkle of garam masala and fresh coriander will complete the dish.
