Easy Recipe: Oven-Roasted Ragi Chips
Making your own healthy chips is easier than you think. These baked ragi chips are crispy, flavourful, and take very little effort. You can make a large batch over the weekend to last you through the work week. Ingredients: 1 cup ragi flour 2 tablespoons rice flour (for extra crispiness) 1 tablespoon olive oil 1/2 teaspoon salt (or to taste) 1/2 teaspoon red chilli powder 1/2 teaspoon cumin powder * Warm water (about 4-5 tablespoons) Method: 1. Preheat your oven to 180°C. 2. In a bowl, mix together the ragi flour, rice flour, salt, and all the spices. 3. Add the olive oil and rub it into the flour with your fingertips until the mixture resembles breadcrumbs. 4. Gradually add warm water and knead to form a firm, non-sticky dough. 5. Divide the dough, place a portion between two sheets of parchment paper, and roll it out as thinly as possible – about 2mm for maximum crispiness. 6. Use a knife or pizza cutter to cut the dough into triangles or squares. Prick them with a fork to prevent puffing. 7. Arrange the chips on a lined baking tray and bake for 15-18 minutes, or until crisp. Let them cool completely before storing them in an airtight container.
Quick Guide: Crunchy Jowar Puffs
Jowar puffs, or jowar dhani, are a light, airy, and satisfying snack. While you can buy them pre-puffed, making them from whole jowar grains at home is a simple process. Once you have the puffs, you can season them any way you like. To make the puffs from grains: 1. Wash whole jowar grains and drain them completely. Spread them on a cloth to air dry for about 30 minutes. 2. Heat a heavy-bottomed pot or cooker on medium-high flame. Add a single layer of jowar grains, ensuring not to overcrowd the pan. 3. Cover with a lid, leaving a small vent for steam to escape. The grains will begin to pop within a few minutes, much like popcorn. To make a savoury masala snack: 1. Heat a teaspoon of ghee or oil in a pan on low flame. 2. Add your roasted jowar puffs (about 1-2 cups) and toast until they are extra crispy. 3. Turn off the heat and add your favourite spices. A mix of salt, turmeric, kashmiri red chilli powder, and a pinch of dry mango powder (amchur) works beautifully. 4. Toss well to coat the puffs evenly.
