The festive season leaves behind joyful memories and, often, large tins of chakli and chivda. Before you tire of these crunchy snacks, why not give them a creative makeover? Here are five simple ways to transform them into exciting appetizers.
The Ultimate Chakli Chaat
One of the
easiest and most satisfying ways to use leftover chakli is to turn it into a flavourful chaat. This street-food classic gets a new lease of life with the unique texture of chakli. Coarsely crush a bowl of chaklis, being careful not to turn them into a fine powder; you want bite-sized pieces for crunch. In a bowl, mix the crushed chakli with finely chopped onions, tomatoes, and boiled potatoes. Drizzle generously with tangy tamarind chutney and spicy green chutney. For added texture and flavour, you can add a handful of roasted peanuts or boiled chickpeas. Finish it off with a sprinkle of chaat masala, a squeeze of fresh lemon juice, and a generous topping of sev. Garnish with fresh coriander for a quick, delicious, and crowd-pleasing evening snack.
Spicy Chivda and Poha Bhel
Much like chaat, bhel puri is another versatile snack that can easily incorporate your leftovers. Leftover chivda, which is already a mix of various ingredients like flattened rice, nuts, and spices, forms a perfect base. To give it more body, mix the chivda with an equal part of plain puffed rice (murmura). Add finely chopped onions and tomatoes to the mix. A spoonful of green chutney adds a fresh, spicy kick. For a sweet and tangy contrast, you can also add a little tamarind chutney. Toss everything together well, squeeze some lime juice over the top, and garnish with coriander. This chivda bhel is a light yet flavourful appetizer that comes together in minutes.
Crunchy Coating for Patties and Tikkis
Move over, breadcrumbs. Crushed chakli makes for a fantastically crunchy and flavourful coating for homemade tikkis or patties. Simply place your chaklis in a bag and crush them with a rolling pin until they have a coarse, breadcrumb-like consistency. Prepare your favourite tikki mixture—whether it's spiced potato (aloo tikki), vegetable, or paneer. Shape the mixture into patties, then dip each one in a thin slurry of cornflour and water before rolling it in the crushed chakli. Make sure the patty is evenly coated. You can then shallow fry or air fry these tikkis until they are golden brown and crisp. The chakli coating not only provides an incredible crunch but also adds its own savoury, spicy flavour to the final dish.
A Savoury Crust for Mini Tarts
For a more elegant appetizer, use finely crushed chakli or chivda to create a savoury tart base. Grind the chakli or chivda into a fine powder in a mixer. Mix this powder with a small amount of melted butter until it resembles wet sand. Press this mixture firmly into the bottom and up the sides of mini tartlet moulds to create a crust. Bake the crusts for about 10 minutes in a moderate oven until they are firm. Once cooled, you can fill these crunchy tart shells with any number of fillings. A simple yet delicious option is a creamy mixture of hung curd, grated vegetables, and herbs. You could also use a paneer bhurji filling or a spiced corn and spinach mixture. These mini tarts are a creative and impressive way to serve up festive flavours.
Flavourful Trail Mix Reinvented
If you're looking for the simplest upgrade of all, transform your leftover chivda into a gourmet trail mix. The chivda already provides a savoury base. To this, you can add a variety of other ingredients to create a more complex and satisfying snack. Consider adding roasted cashews and almonds for richness, pumpkin seeds and sunflower seeds for a nutritional boost, and a handful of raisins or dried cranberries for a touch of sweetness that contrasts beautifully with the savoury chivda. You can even add small, broken pieces of chakli for extra crunch. Toss it all together and store it in an airtight container for a ready-to-eat snack that’s perfect for evening tea or as a light bite for unexpected guests.
