The Two Contenders: How They're Made
The primary difference between cold-pressed and refined oils lies in their extraction process. Cold-pressed oils, as the name suggests, are made by mechanically crushing seeds or nuts and forcing out the oil without using high heat or chemicals. This
traditional method, sometimes known as 'kachi ghani', keeps the temperature low, typically below 49°C. The goal is to preserve the oil's natural flavour, aroma, and nutritional profile. Refined oils, on the other hand, undergo a multi-step industrial process designed for high yield and a long shelf life. This involves extracting oil using high heat and sometimes chemical solvents like hexane. Afterwards, the crude oil is purified through processes like degumming, neutralizing, bleaching, and deodorizing, which remove impurities but also strip away many of the natural nutrients, colours, and aromas.
Smoke Point: Why It's a Kitchen Essential
Every oil has a smoke point, which is the temperature at which it stops looking shimmery and starts to burn, producing visible smoke. This is more than just a culinary nuisance; when an oil hits its smoke point, its fats begin to break down. This process not only creates a bitter, burnt flavour that can ruin your dish but also releases harmful compounds called free radicals. Consuming these can contribute to inflammation and other health issues. Heating oil past its smoke point also destroys beneficial nutrients like vitamins and antioxidants present in both the oil and the food you're cooking.
The Smoke Point Showdown
Because of their different processing methods, the two types of oil have vastly different smoke points. Refined oils consistently have higher smoke points because the refining process removes the very impurities and free fatty acids that cause oil to smoke at lower temperatures. In contrast, unrefined cold-pressed oils retain these compounds, which gives them more flavour and nutrients but also makes them more sensitive to heat. For example, refined groundnut oil has a smoke point of around 230°C, while its cold-pressed counterpart smokes at a much lower 160-180°C. Similarly, refined coconut oil can handle heat up to about 196°C, whereas unrefined virgin coconut oil begins to smoke around 180°C. This makes refined oils functionally better for sustained high-heat cooking methods like deep frying.
A Look at Nutritional Value
This is where cold-pressed oils truly shine. Because they undergo minimal processing without heat or chemicals, they retain a wealth of their original nutrients. They are often rich in natural antioxidants like vitamin E, as well as healthy monounsaturated and polyunsaturated fats. These compounds offer various health benefits, including supporting heart health and reducing inflammation. The intensive processing that refined oils go through strips away a significant portion of these beneficial nutrients. While refining makes the oil more stable and gives it a neutral taste, it comes at the cost of its natural vitamins and antioxidants. The final product is often left with what some consider 'empty calories' compared to the nutrient-dense profile of a cold-pressed oil.
The Right Oil for the Right Job
Choosing the right oil isn't about declaring one 'good' and the other 'bad'; it's about matching the oil to your cooking method. For high-temperature cooking like deep-frying pakoras or samosas, a refined oil with a high smoke point is a safer and more effective choice. For most everyday Indian cooking, such as making a tadka, sautéing vegetables for a sabzi, or preparing curries, the temperatures generally stay within the safe range for cold-pressed oils. Cold-pressed mustard, groundnut, and sesame oils are excellent for these applications, adding their distinct, authentic flavours to the dish. Cold-pressed oils with their robust flavours are also perfect for drizzling over salads or mixing into chutneys and dips where there's no heat involved at all.
