Traditionally used as a souring agent in curries and dals, kokum is also the star of a beloved summer cooler. It's known as a natural coolant, making it perfect for beating the heat. Rich in antioxidants, kokum is valued in traditional medicine for its ability to aid digestion, improve acidity, and reduce inflammation. It contains compounds like hydroxycitric acid (HCA), which is believed to help suppress appetite.
Recipe: Spiced Kokum Cooler (Kokum Sharbat)
This vibrant magenta-coloured drink is a delightful balance of sour, sweet, and spiced notes. To make a concentrate you can store, start by soaking one cup of dried kokum in two cups of warm water for a few hours until soft. Blend this mixture and strain it to get a thick extract. In a separate pan, create a simple syrup by dissolving one to one-and-a-half cups of sugar or jaggery in a cup of water over low heat. Once the syrup cools, mix in the kokum extract. Add a teaspoon of roasted cumin powder and half a teaspoon of black salt for that classic spiced flavour. To serve, simply mix three to four tablespoons of this concentrate into a glass of chilled water, add ice cubes, and garnish with fresh mint leaves.

Recipe: Zesty Mint Lemonade (Nimbu Pudina Sharbat)
This popular Indian lemonade, often called 'Shikanji' or 'Nimbu Pani', is simple to whip up. In a blender, combine one cup of fresh mint leaves, the juice of two large lemons, four to five tablespoons of sugar (adjusted to your taste), and a teaspoon of black salt with about half a cup of water. Blend until you have a smooth paste. Strain this mixture through a sieve into a large pitcher to remove any coarse bits. Add three to four cups of chilled water and plenty of ice cubes, stirring well to combine everything. Pour into glasses and garnish with a lemon slice and a few extra mint leaves for a picture-perfect finish. For a fizzy twist, you can top it off with soda water.
