The Resurgence of Mighty Millets
Millets, long-standing staples of the Indian diet, are making a remarkable comeback, and for good reason. These tiny grains are nutritional powerhouses, celebrated for being naturally gluten-free and packed with protein, fibre, and essential minerals.
Unlike refined flour (maida), which can cause sharp spikes in blood sugar, millets have a low glycemic index, providing sustained energy that keeps you full and satisfied for longer. This makes them an ideal ingredient for festive cooking, allowing you to craft sweets that are not just tasty but also nourishing. The Goodness of Ragi (Finger Millet)

Recipe: Wholesome Ragi Laddoos
These laddoos are a perfect blend of nutrition and taste, sweetened with jaggery for a rustic flavour. Ingredients: - 1 cup Ragi Flour (finger millet flour) - ¾ cup powdered Jaggery - ¼ cup assorted Nuts (like almonds and peanuts), roughly chopped - 4 Green Cardamoms, powdered - 2 to 4 tbsp Ghee (clarified butter) Instructions: 1. Heat a heavy-bottomed pan and add the ragi flour. Dry roast on a low flame for about 8-10 minutes until it becomes aromatic and slightly changes colour. This step is crucial to remove the raw taste of the flour. Transfer to a bowl and let it cool. 2. In the same pan, lightly roast the chopped nuts until they are fragrant. Set aside. 3. In a mixing bowl, combine the cooled roasted ragi flour, powdered jaggery, powdered cardamom, and roasted nuts. Mix everything thoroughly. 4. Gently warm the ghee in a small pan until it melts. Gradually pour the warm ghee into the flour mixture, mixing as you go. Use just enough ghee to help the mixture bind together. 5. While the mixture is still warm, take small portions and roll them firmly between your palms to form round laddoos. Let them cool completely before storing them in an airtight container.
The Jowar (Sorghum) Advantage
Jowar, also known as sorghum, is another gluten-free hero in the world of millets. It is an excellent source of dietary fibre, with a single serving providing a significant portion of the daily recommended intake, which helps promote digestive health. Jowar is also rich in protein and packed with essential minerals like magnesium, iron, and phosphorus, which contribute to bone health and improved energy levels. Its antioxidant properties, derived from compounds like phenols and tannins, help combat oxidative stress and support heart health by potentially lowering cholesterol levels.
Recipe: Creamy Jowar Kheer
This comforting kheer uses whole jowar grains to create a creamy, wholesome dessert that is perfect for any celebration. Ingredients: - ½ cup Jowar (sorghum), soaked overnight - 4 cups Milk (full-fat or almond milk) - ½ cup Jaggery or to taste - ½ tsp Cardamom Powder - 2 tbsp mixed Nuts (cashews, pistachios, almonds), chopped - 1 tbsp Raisins - 1 tbsp Ghee Instructions: 1. Drain the soaked jowar and pressure cook it with 2 cups of water for about 4-5 whistles, or until the grains are soft and cooked through. Mash them slightly with the back of a spoon. 2. In a thick-bottomed pan, bring the milk to a boil. Add the cooked jowar and simmer on medium heat, stirring occasionally, until the mixture thickens and the milk reduces. 3. Add the jaggery and cardamom powder, stirring continuously until the jaggery dissolves completely. Cook for another 5 minutes. 4. In a separate small pan, heat the ghee and fry the chopped nuts and raisins until they turn golden brown. 5. Pour the ghee with the nuts and raisins into the kheer and mix well. 6. Serve the Jowar Kheer warm or chilled.
