The foundation of a safe cutting tool is the material it's made from. To be considered food-safe, a material must be non-toxic, durable, corrosion-resistant, and non-absorbent. This ensures it does not leach harmful substances into food or create microscopic
hiding places for bacteria. Stainless steel is a leading choice, particularly grades 304 and 316, prized for their resistance to rust, acids, and salts commonly found in food products. Grade 316 is especially robust against chlorides, making it ideal for processing items with high salt content. Other approved materials include certain plastics like polyethylene (PE) and polypropylene (PP), which are lightweight and versatile. Ceramic blades are another excellent option, as they are non-reactive, rust-proof, and can hold a sharp edge for a very long time, though their brittleness makes them better for specific, lighter-duty tasks. The key is selecting a material that can withstand repeated, rigorous cleaning without degrading.
Understanding Regulatory Standards
Compliance with food safety regulations is non-negotiable. In India, the Food Safety and Standards Authority of India (FSSAI) sets the rules for materials that come into contact with food. These regulations specify that such materials must not transfer their components into food in quantities that could endanger human health. While the FSSAI provides a framework, it often references standards from the Bureau of Indian Standards (BIS), such as IS 9845 for food-grade plastics. Globally, organisations like the FDA in the United States and the EFSA in Europe have similar stringent requirements. For business owners, this means sourcing cutting tools from reputable suppliers who can certify that their products meet these standards. Any leftover detergent can neutralise the sanitiser. 4. Sanitize: Apply a chemical sanitiser or use very hot water (at least 77°C) for the required contact time as specified by the manufacturer or health codes. 5. Air-Dry: Allow tools to air-dry completely before storage. Wiping with cloths can reintroduce contaminants. Wet surfaces are breeding grounds for bacteria.
Preventing Cross-Contamination
Cross-contamination is the transfer of harmful bacteria from one surface or food item to another. Cutting tools are common culprits. A knife used to cut raw chicken can easily transfer Salmonella to fresh vegetables if it is not properly cleaned and sanitised between tasks. To prevent this, food businesses should implement a color-coding system for cutting tools and boards—for instance, using red for raw meat, green for vegetables, and blue for seafood. This simple visual cue drastically reduces the risk of accidental cross-contamination. Staff must be rigorously trained on these procedures, understanding not just the 'how' but the 'why' behind them.
