Hostel life often means limited space, minimal equipment, and a constant battle for a clean spot on the counter. But that shouldn't stop you from eating well. The key is to embrace one-pot cooking. A single induction cooktop or even an electric kettle
can be surprisingly versatile. Stock up on essentials that don't need refrigeration: small packets of rice and dal, basic spices like cumin, turmeric, and chili powder, and some long-lasting vegetables like onions, potatoes, and tomatoes. Frozen vegetables are also a fantastic, hassle-free option. By cooking smart, you save time on both preparation and washing up—a true luxury for any student.
Recipe 1: 15-Minute Vegetable Pulao
This flavourful vegetable pulao comes together in roughly 15 minutes of active cooking time, making it a perfect weeknight meal. The trick is to have your vegetables chopped and ready to go. While many recipes call for an Instant Pot, this can easily be adapted for a single pan or pressure cooker on an induction stove. Ingredients: 1 tablespoon ghee or oil 1/2 teaspoon cumin seeds 1 small bay leaf 1 small onion, thinly sliced 1 teaspoon ginger-garlic paste 1 cup mixed vegetables (carrots, peas, beans, corn) 1/2 cup basmati rice, rinsed and soaked for 15 minutes 1/4 teaspoon turmeric powder 1/2 teaspoon garam masala Salt to taste * 1 cup water Instructions: 1. Heat ghee or oil in a pot over medium heat. Add cumin seeds and the bay leaf, letting them sizzle for a few seconds. 2. Add the sliced onion and sauté until translucent. Stir in the ginger-garlic paste and cook for another minute until fragrant. 3. Toss in the mixed vegetables and sauté for 2-3 minutes until they are slightly tender. 4. Add the turmeric powder, garam masala, and salt. Stir well to coat the vegetables. 5. Drain the soaked rice and add it to the pot. Gently mix everything together for a minute. 6. Pour in the water, bring it to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 10-12 minutes, or until all the water is absorbed and the rice is fluffy. Let it rest for 5 minutes before serving.
Recipe 2: High-Protein Quinoa Khichdi
Khichdi is the ultimate comfort food, and this version swaps traditional rice for quinoa, instantly boosting the protein content. Combined with lentils, it becomes a complete and nourishing meal that’s easy to digest and incredibly simple to prepare in one pot. Ingredients: 1 tablespoon oil or ghee 1/2 teaspoon cumin seeds A pinch of asafoetida (hing) 1/2 inch ginger, finely chopped 1/2 small onion, chopped 1/2 cup mixed vegetables (optional, like carrots and peas) 1/4 cup quinoa, rinsed 1/4 cup moong dal or red lentils (masoor dal), rinsed 1/4 teaspoon turmeric powder Salt to taste 2.5 cups water A squeeze of lime juice Instructions: 1. Heat oil or ghee in a pot. Add cumin seeds and asafoetida. Once the seeds start to splutter, add the chopped ginger and onion. Sauté until the onion softens. 2. If using vegetables, add them now and cook for a couple of minutes. 3. Add the rinsed quinoa and dal to the pot, followed by turmeric powder and salt. Stir to combine. 4. Pour in the water and bring the mixture to a boil. 5. Reduce the heat, cover the pot, and let it simmer for about 15-20 minutes, or until the dal and quinoa are cooked through and the khichdi reaches a porridge-like consistency. Stir occasionally to prevent sticking. 6. Turn off the heat, add a squeeze of lime juice, and mix well before serving.
Make It Your Own
The beauty of these recipes is their flexibility. Don't have the exact vegetables? Use whatever you have on hand. Add a handful of spinach at the end for extra nutrients or throw in some paneer cubes with the pulao for an even bigger protein hit. For the khichdi, a final tempering (tadka) of ghee, cumin, and a dried red chilli can elevate the flavour, but it's delicious even without it.
