The science is clear: light steaming is the optimal way to prepare cruciferous vegetables to preserve their most powerful nutrients. Aim for a quick steam of 3 to 7 minutes, until the vegetables are tender-crisp but still brightly coloured. If you crave the flavour of stir-fried or roasted veggies, there's a simple trick: chop your broccoli, cauliflower, or other cruciferous vegetable and let it rest for 30-40 minutes before cooking. This 'hack and hold' method allows the myrosinase enzyme to work its magic and create sulforaphane before the heat has a chance to destroy it. You can also try a 'steam-fry' method: lightly steam the veggies first, then give them a very quick toss in a hot pan with a little oil and seasoning to finish.
