ka Atta (amaranth flour). These are used to make vrat-friendly puris, parathas, and halwa. Sabudana (tapioca pearls) is another must-have for making comforting Khichdi or crispy Vadas. Buying these early ensures you have the base for most fasting meals ready to go.
Nuts, Seeds, and Dried Fruits
Nuts and dried fruits are central to Janmashtami prasad, adding richness and nutrition. Makhana (fox nuts) are particularly important, used in making Makhana Paag and Kheer, or simply roasted as a snack. Stock up on almonds, cashews, pistachios, and raisins. These are vital for making Dhaniya Panjiri, a key prasad made from roasted coriander seed powder, ghee, and a generous mix of nuts. Grated dry coconut and melon seeds (char magaz) are also common ingredients in panjiri and other sweets.
Ghee and Sweeteners
No festive Indian cooking is complete without ghee. From frying puris and vadas to preparing halwa and panjiri, high-quality ghee is indispensable and has a long shelf life, making it perfect for early purchase. Along with ghee, ensure you have your sweeteners sorted. Jaggery powder and powdered sugar or mishri (rock sugar) are needed for virtually all sweet preparations. Makhan Mishri, a simple blend of fresh butter and rock sugar, is considered a favourite of Lord Krishna, so having mishri on hand is essential.
Essential Spices and Seasonings
While your spice box may already be full, festival cooking has specific requirements, especially for fasting. The most important seasoning is Sendha Namak (rock salt), as regular table salt is avoided during the vrat. Other key spices to check for are whole cumin seeds (jeera), cardamom powder (elaichi), and dried ginger powder (sonth). Coriander seeds (sabut dhania) are crucial if you plan to make fresh Dhaniya Panjiri at home. These simple spices form the flavour base for most savoury and sweet fasting dishes.
Dairy and Pooja Items to Plan For
While fresh dairy items like milk, yogurt (curd), and paneer must be bought closer to the date, planning for them is part of the preparation. These ingredients are fundamental for making Panchamrit, the sacred five-ingredient offering of milk, curd, honey, ghee, and sugar. You will also need them for kheer and other milk-based sweets. It is also a good time to check your supply of other pooja essentials that have a long shelf life, such as cotton wicks, camphor, and incense sticks, so your focus on the day can be purely on the celebration.
