Classic Comfort: Kanda Poha
Poha, or flattened rice, is a beloved breakfast staple across India, and for good reason. It's light on the stomach, incredibly easy to digest, and can be prepared in under 20 minutes. The most popular variant, Kanda Poha, gets its flavour from sautéed
onions, a simple tempering of mustard seeds and curry leaves, and a final flourish of lemon juice. To make it, begin by gently rinsing thick or medium poha flakes in a colander until they soften, then set them aside. Heat a little oil in a pan, and once it's hot, add mustard seeds. When they start to pop, add chopped onions, green chillies, and curry leaves, and sauté until the onions are translucent. You can also add peanuts for a delightful crunch. Add a pinch of turmeric for that vibrant yellow colour, then fold in the softened poha. Mix everything gently, cover, and let it steam for a couple of minutes. Garnish with fresh coriander and a generous squeeze of lemon juice before serving. For a more filling meal, you can add diced boiled potatoes to make Kanda Batata Poha.

For those seeking a healthier, high-fibre alternative, the Oats Chilla is a fantastic choice. This savoury pancake is a modern twist on the traditional besan chilla and is perfect for a nutrient-dense start to your day. Oats are rich in fibre, which helps in regulating blood sugar and keeps you feeling full for longer. To prepare the batter, grind instant or rolled oats into a fine powder. In a bowl, combine the oat flour with a few tablespoons of besan (gram flour) for better binding. To this, add finely chopped vegetables like onions, tomatoes, and capsicum, along with ginger, green chillies, and spices like turmeric and cumin powder. Slowly add water to form a smooth, pourable batter—not too thick, not too runny. Let the batter rest for about 10 minutes. Heat a non-stick tawa, lightly grease it with oil, and pour a ladleful of batter, spreading it into a thin circle. Cook on medium heat for a couple of minutes on each side until golden brown and crisp. Serve hot with a side of curd or your favourite chutney for a complete and satisfying meal.

This North Indian-style scrambled cottage cheese can be whipped up in just 10 minutes and is incredibly versatile. It’s a great vegetarian alternative to scrambled eggs and is packed with flavour. Start by heating oil in a pan and sputtering cumin seeds. Add finely chopped onions, ginger, garlic, and green chillies, and sauté for a few minutes until the onions soften. Next, add chopped tomatoes and cook until they turn mushy. Sprinkle in your basic spices—turmeric powder, red chilli powder, and a touch of garam masala. Now, add the star ingredient: crumbled paneer. You can use either store-bought or homemade paneer. Mix well, ensuring the paneer gets coated in the masala, and cook for another two to three minutes until everything is heated through. A squeeze of lemon juice and a garnish of fresh coriander leaves at the end elevates the dish beautifully.
