The fruit in the spotlight is the dazzling dragon fruit, also known as pitaya. With its brilliant pink or yellow skin and green, scale-like leaves, it looks like something out of a fantasy novel. Inside, you'll find a surprising speckled flesh—usually
white or a deep magenta—dotted with tiny, edible black seeds. Originally from Central America, this cactus fruit is now cultivated across tropical regions and is increasingly available in Indian markets. Its taste is subtly sweet, often described as a cross between a kiwi and a pear, with a refreshingly juicy texture.

To prepare it, simply place the fruit on a cutting board and slice it in half lengthwise with a sharp knife. From here, you can easily scoop out the flesh with a spoon and eat it directly from the skin. Alternatively, you can peel the skin away from the flesh and then chop it into cubes or slices for use in various dishes. The skin itself is not edible.
