Looking to reinvent your breakfast routine? This Rajgira Paneer Dosa is a game-changer. It combines the goodness of a gluten-free ancient grain with a creamy, spiced paneer filling for a meal that is both incredibly delicious and packed with protein.
The Magic of Rajgira
Rajgira, also known as amaranth, is an ancient pseudo-cereal that has been a staple in India for centuries, especially during fasting periods like Navratri. But its benefits go far beyond tradition. Rajgira is naturally gluten-free, making it an excellent choice for those with gluten sensitivities or celiac disease. It's a nutritional powerhouse, boasting a high concentration of protein, calcium, iron, and fibre. Using rajgira flour for the dosa batter not only provides a unique, slightly nutty flavour but also results in a crepe that is light, crisp, and easier to digest. This super grain helps in building bone strength, aids digestion, and can help manage weight by keeping you feeling full for longer.
A Rich and Savoury Paneer Filling
While traditional dosas often feature a potato-based masala, this recipe opts for a rich and flavourful paneer filling. Paneer, or Indian cottage cheese, is a fantastic source of protein and calcium, making this dish even more nutritionally balanced. The filling is not just plain paneer; it’s a delightful ‘bhurji’ or scramble, where crumbled paneer is sautéed with onions, tomatoes, and a blend of aromatic spices like cumin, coriander, and garam masala. This creates a moist, savoury, and slightly tangy stuffing that perfectly complements the earthy flavour of the rajgira dosa. The soft texture of the paneer filling contrasts wonderfully with the crispiness of the dosa, creating a truly satisfying bite every time.
Recipe: How to Make Rajgira Paneer Dosa
This recipe is surprisingly straightforward and can be broken down into three main parts: preparing the batter, making the filling, and assembling the dosas. It serves approximately 2-3 people. For the Dosa Batter: 1 cup Rajgira (Amaranth) Flour 1/4 cup Curd (Yogurt), optional for tanginess 1/2 teaspoon Salt (or rock salt if for fasting) Water, as needed (approximately 1.5 cups) For the Paneer Filling: 200g Paneer, crumbled 1 tablespoon Ghee or Oil 1 teaspoon Cumin Seeds 1 medium Onion, finely chopped 1 small Tomato, finely chopped 1 Green Chilli, minced 1/2 teaspoon Ginger-Garlic paste 1/2 teaspoon Turmeric Powder 1/2 teaspoon Red Chilli Powder 1/2 teaspoon Garam Masala Salt to taste Fresh Coriander Leaves, chopped, for garnish
Step 1: Prepare the Dosa Batter
In a mixing bowl, combine the rajgira flour and salt. If using, whisk in the curd. Gradually add water while continuously whisking to form a smooth, lump-free batter. The consistency should be thin and pourable, similar to a standard dosa or crepe batter. Let the batter rest for at least 15–20 minutes. This allows the flour to hydrate properly, which helps in getting a crispier dosa.
Step 2 : Prepare the Paneer Filling
While the batter rests , prepare the filling . Heat ghee or oil in a pan over medium heat . Add the cumin seeds and let them splutter . Add the minced green chilli and ginger–garlic paste , and sauté for a minute until fragrant . Add the finely chopped onions and cook until they turn soft and translucent . Now , add the chopped tomatoes and cook until they soften . Add the spice powders—turmeric , red chilli powder , and garam masala—along with salt . Mix well and cook for another two minutes until the raw smell of the spices disappears . Add the crumbled paneer and mix gently to combine everything . Cook for $2–3$ minutes , then turn off the heat . Garnish with fresh coriander leaves and set aside .
Step $3$ : Cook and Assemble the Dosas
Heat a non–stick dosa tawa or a flat pan over medium–high heat . Lightly grease it with a few drops of oil . Once hot , pour a ladleful of the rajgira batter onto the centre and spread it outwards in a circular motion to form a thin dosa . Drizzle a little ghee or oil around the edges and on top . Cook for about $2–3$ minutes , or until the bottom turns golden brown and the edges start to lift . Place a generous amount of the paneer filling on one half of the dosa . Fold the other half over the filling . Press down gently and cook for another $30$ seconds . Serve the Rajgira Paneer Dosa hot off the pan .
