Transform the humble vegetable cutlet into a protein powerhouse. In a bowl, mash boiled potatoes and add an equal part of cooked and mashed red lentils. To this mixture, add grated firm tofu and finely crumbled paneer. The lentils and potatoes act as a binder, while the tofu and paneer add substance and a significant protein boost. Season with ginger, green chillies, and your favourite spices, then shape into patties and pan-fry or air-fry until golden. Serve with a mint-yogurt dip for an extra protein kick from the curd.

Move beyond the standard paneer paratha with a multi-protein filling. Create a base of spicy, cooked moong dal. Let it cool completely.
