For a crispier result, you can soak them in water for a bit to remove excess starch. Heat oil in a pan, add mustard and cumin seeds, and let them splutter. Add the potatoes, turmeric, and salt, and stir-fry. You can cook them covered for a softer texture or uncovered, stirring occasionally, for crispier edges. Towards the end, toss in red chilli powder, coriander powder, and a pinch of garam masala. A squeeze of lemon juice at the end brightens up all the flavours. This dish pairs perfectly with dal and rice or can be rolled into a roti for a quick wrap.
One-Pot Vegetable Pulao
When you want a complete meal in a single pot, vegetable pulao is the answer. This aromatic rice dish is incredibly adaptable to whatever you have on hand. Start by soaking basmati rice for about 20-30 minutes. In a pressure cooker or a heavy-bottomed pot, heat ghee or oil and temper whole spices like bay leaves, cloves, and cumin seeds. Sauté sliced onions until they start to brown, then add ginger-garlic paste, chopped tomatoes, and any vegetables you have—diced potatoes, carrots, and frozen peas are classic choices. Add your spice powders, then the drained rice, water, and salt. Cook until the rice is fluffy and has absorbed all the fragrant flavours. It's a full meal that requires minimal supervision and cleanup.
Instant Rava Upma
For a meal that is even quicker than rice, turn to sooji, or semolina. Upma is a thick, savoury porridge from South India that can be ready in about 15 minutes, making it a brilliant breakfast-for-dinner option. Dry roast the sooji in a pan until it's fragrant and set it aside. In the same pan, heat oil, pop some mustard seeds, and add curry leaves, chopped onions, and green chillies. You can also add finely chopped carrots or peas. Pour in hot water and bring it to a boil with salt. Slowly add the roasted sooji while stirring continuously to prevent lumps. Cover and cook on low heat for just a few minutes until the sooji absorbs the water and becomes fluffy. A garnish of fresh coriander and a little ghee on top makes it perfect.
