- 2 medium-sized raw green mangoes (approx. 500g)
- 1/2 cup sugar or jaggery (adjust to taste)
- 2 teaspoons roasted cumin powder
- 1 teaspoon black salt (kala namak)
- A handful of fresh mint leaves (optional)
- Chilled water and ice cubes to serve
Method:
1. Wash the raw mangoes thoroughly. Place them in a pressure cooker with enough water to cover them and cook for 2-3 whistles, or until they are soft and tender. Alternatively, you can boil them in a pot until the skin is soft and the pulp is mushy.
2. Once cooled, peel the mangoes and squeeze out all the soft pulp. Discard the skin and the seed.
3. In a blender, combine the mango pulp, sugar or jaggery, roasted cumin powder, black salt, and mint leaves.
4. Blend until you have a smooth, thick paste. This is your Aam Panna concentrate.
5. To serve, add 2-3 tablespoons of the concentrate to a glass, top with chilled water, and stir well. Add ice cubes and garnish with a fresh mint sprig before enjoying.
