The Science of Stacking
The moment a hot roti comes off the pan, it begins to lose moisture to the air. The process is simple dehydration, but it’s accelerated by a natural process called starch retrogradation. As a cooked roti cools, its starch molecules rearrange and release
water, causing it to become firm and brittle. Stacking fresh rotis immediately traps the steam rising from each one. This creates a warm, humid environment that slows down moisture loss and keeps the entire stack pliable. The steam essentially helps to relax the starches, preventing the roti surfaces from drying out prematurely. If left uncovered, this precious moisture escapes, leading to the dreaded crispy edges and a leathery texture.
The Casserole and Cloth Method
To truly master moisture retention, a simple stack isn't enough. The best method involves an insulated container, like a casserole or roti box, and a clean cotton cloth. Line the casserole with a cotton towel before you start placing the rotis inside. Once you've stacked the rotis, fold the cloth over to cover them completely before closing the lid. The breathable cotton fabric is key; it absorbs excess condensation, which prevents the rotis at the top and bottom from becoming soggy, while still trapping enough heat and ambient steam to keep the stack soft. Some even suggest placing a small stand or plate inside the casserole to elevate the rotis, allowing moisture to collect at the very bottom, away from the bread itself.
Soft Rotis Start with the Dough
Perfectly stored rotis are impossible without a perfectly prepared dough. The process of keeping them soft begins long before they hit the tawa. Using warm water to knead the dough helps the flour hydrate more effectively, creating a smoother, more pliable result. The dough should be soft but not sticky; if you press a finger into it, an impression should remain. After kneading, resting the dough is a crucial, non-negotiable step. Cover the dough with a damp cloth and let it sit for at least 20-30 minutes. This rest period allows the gluten to relax and the flour to fully absorb the water, making the dough easier to roll and ensuring the final rotis puff up properly and stay soft for hours.
Cooking for Lasting Softness
Your cooking technique also plays a vital role. Cooking rotis on a medium-high heat is ideal. If the heat is too low, the roti spends too much time on the pan, drying out completely. If it's too high, the outside can burn before the inside cooks. The goal is to cook it quickly enough to retain internal moisture. A key indicator of a well-cooked roti is the puff. When the roti puffs up on the direct flame or on the tawa, it’s creating an internal pocket of steam. This trapped steam is a natural moisture reserve that helps keep the roti soft long after it has cooled. Immediately after cooking, brushing each roti with a small amount of ghee or butter creates a fat barrier that helps lock in that moisture and adds flavour.
Storing and Reheating for Later
If you plan to eat the rotis much later or the next day, proper storage is essential. For refrigeration, wrap the cooled rotis first in a paper towel and then in aluminum foil to prevent them from becoming soggy. For longer storage, rotis freeze exceptionally well. Allow them to cool completely, then stack them with parchment paper between each one and place them in a freezer-safe bag or container. To reheat, avoid the tawa, which can make them hard. Instead, the microwave is your best friend. Sprinkle the roti with a little water or wrap it in a damp paper towel and microwave for about 30 seconds. This re-steams the roti, restoring its softness as if it were freshly made.
