The Golden Rule of Air Frying Snacks
Before we dive into specific recipes, it's important to understand the basics of converting deep-fried favourites to the air fryer. The secret to success isn't just cutting out oil, but using it smarter. A light brush or spray of oil on your snacks is crucial
for achieving that golden, crispy texture. Also, never overcrowd the air fryer basket; food needs space for the hot air to circulate and cook it evenly. Most snacks require preheating the air fryer for a few minutes and a good shake or a flip halfway through the cooking time to ensure browning on all sides.
The Classic Samosa, Reimagined
The undisputed king of street snacks, samosas can be made surprisingly well in an air fryer. The pastry becomes flaky and crisp without being greasy. For a quick version, frozen samosas work beautifully. Simply preheat your air fryer to 180°C, lightly brush or spray the samosas with oil, and cook for 12-15 minutes, flipping them halfway through. If making them from scratch with a classic potato and pea filling, ensure your pastry is sealed well. The result is a snack that tastes remarkably close to the deep-fried original, with a satisfying crunch in every bite.
Perfectly Crispy Pakoras
Making pakoras or bhajis in an air fryer requires a slight adjustment to the batter. Unlike deep frying, where a looser batter can hold its shape in the hot oil, air frying needs a thicker, stickier batter that clings to the vegetables. Combine besan (gram flour) with thinly sliced onions, potatoes, or spinach, and just enough water to form a dense mixture. Instead of dropping loose dollops, shape the mixture into slightly flattened patties. Place them on parchment paper inside the preheated air fryer basket, spray with oil, and cook at around 190°C for 12-15 minutes, flipping midway. This method prevents the batter from dripping and ensures a crispy finish.
Aloo Tikki That's Light and Crunchy
Aloo tikki, the beloved potato patty, is a natural fit for the air fryer. The key to a crispy exterior is adding a binding agent like breadcrumbs or cornflour to your mashed potato mixture. Mash boiled potatoes and mix with chopped onions, green chillies, coriander, and spices like chaat masala. Shape them into flat, even patties, about one centimetre thick. Brush or spray both sides with oil and place them in a single layer in the basket. Air fry at 180°C for about 15-18 minutes, flipping at the 10-minute mark for an even, golden-brown crust. They come out perfectly crisp on the outside and soft inside.
Smoky Paneer Tikka Without the Tandoor
You don't need a traditional tandoor to get that delicious, smoky flavour of paneer tikka. Marinate cubes of paneer and chunks of capsicum and onion in a mixture of yoghurt and tikka masala spices for at least 30 minutes. Thread them onto small wooden skewers that have been soaked in water to prevent burning. Place the skewers in the air fryer basket, brush with a little oil, and cook at 200°C for about 10-12 minutes. Turn them once during cooking to get a slight char on all sides. This quick method delivers tender, flavourful paneer that makes for a fantastic appetiser or a quick meal.
Kurkuri Bhindi (Crispy Okra Fries)
For a truly addictive and healthy snack, turn bhindi (okra) into crispy fries. The trick is to wash and dry the okra thoroughly before slicing it thinly. Toss the slices in a mix of besan, rice flour, spices, and a tiny amount of oil. Spread them in a single, even layer in your air fryer basket, making sure not to overcrowd them. Air fry at 180°C to 190°F, tossing them halfway through, until they are golden and crunchy. They will continue to crisp up as they cool, giving you a snack that rivals potato chips.
