You'll need about half a kilogram of black carrots, two litres of water, a few tablespoons of coarsely ground mustard seeds, and black salt to taste. First, wash and chop the carrots into finger-length sticks. In a large, sterilized glass jar, combine the carrots, ground mustard, and salt. Fill the jar with water, leaving a little space at the top. Cover the mouth of the jar with a muslin cloth and secure it. Let it sit in a sunny spot for three to seven days, stirring it once daily with a clean spoon. The Kanji is ready when it develops a tangy, pungent flavour. The fermentation time will vary depending on the amount of sunlight and warmth.
