Why One-Pot and High-Protein?
During the monsoon, our bodies often crave warm, nourishing food, but our energy levels can take a dip. This is where high-protein meals come in. Protein provides sustained energy, helps maintain muscle strength, and supports a robust immune system, which
is crucial when seasonal bugs are on the rise. Combining this with a one-pot cooking method is a game-changer. It means fewer utensils, minimal cleanup, and a deeply flavourful meal where all the ingredients simmer together. It’s the perfect formula for a wholesome, hassle-free dinner on a rainy evening.
The Classic Khichdi, Upgraded
Khichdi is the quintessential Indian comfort food, practically synonymous with rainy days. To elevate it into a high-protein powerhouse, move beyond the basic rice and moong dal. Create a 'panchmel' khichdi by using a mix of five different lentils, such as toor, masoor, chana, and urad dal, along with brown or red rice for added fibre. To boost the protein further, toss in cubes of paneer, soya chunks, or mixed vegetables like peas and carrots towards the end of the cooking process. Cooking it all in one pressure cooker with a dollop of ghee and classic spices like turmeric, cumin, and asafoetida makes it both digestive and deeply satisfying.
A Hearty Chicken and Rice Pulao
For a non-vegetarian option, a one-pot chicken and rice pulao is a complete meal that requires just one vessel. Start by marinating chicken pieces in a mix of yoghurt, ginger-garlic paste, and powdered spices like turmeric, coriander, and garam masala. In a heavy-bottomed pan or pressure cooker, sauté whole spices like bay leaves, cinnamon, and cloves before adding onions and the marinated chicken. Once the chicken is seared, add soaked basmati rice and water or chicken stock, and let it all cook together. The rice absorbs all the savoury flavours from the chicken and spices, resulting in a fragrant and filling dish packed with protein.
Quick Paneer and Vegetable Masala
Paneer is a fantastic source of protein, and a quick one-pot masala is an excellent way to enjoy it on a weeknight. You can create a rich, creamy gravy without spending hours in the kitchen. In a pressure cooker or a deep pan, prepare a base by sautéing onions, tomatoes, ginger, and garlic. Add your spice powders, then blend this mixture into a smooth puree. Return the puree to the pot, add water to adjust consistency, and bring it to a simmer. Stir in paneer cubes and some quick-cooking vegetables like bell peppers or green peas. Let it cook for a few more minutes, and you have a restaurant-style dish ready to be served with hot rotis.
Spicy Chickpea and Spinach Curry
Plant-based, protein-rich, and incredibly flavourful, a one-pot chickpea and spinach curry (chana palak) is a fantastic monsoon meal. Chickpeas are an excellent source of protein and fibre. Start by making a simple tadka of cumin seeds, onions, garlic, and ginger in a pot. Add pureed tomatoes and spices like turmeric, chilli powder, and coriander powder. To this flavourful base, add a can of drained chickpeas and a splash of water, letting it simmer to allow the flavours to meld. Finally, stir in a few large handfuls of fresh spinach and let it wilt into the curry. It’s a nutrient-dense dish that comes together quickly and warms you from the inside out.
