In a separate bowl, crumble or grate firm tofu and an equal amount of paneer. Mix the mashed lentils with the tofu and paneer. To this mixture, add finely chopped onions, green chillies, grated ginger, and spices like coriander powder, chaat masala, and garam masala. The lentil and tofu mixture acts as a binder, so you likely won't need any flour. Form the mixture into small patties or ovals. You can then pan-fry them in a little oil until golden brown and crisp on both sides. Serve these protein-packed kebabs with a simple yogurt and mint dip for a satisfying and healthy meal.

In a baking dish, combine a cup of dry brown or green lentils with diced sweet potato, chopped bell peppers, and a can of full-fat coconut milk.
