There is perhaps no dish more synonymous with comfort in an Indian household than khichdi. During the monsoon, its appeal skyrockets. A wholesome, nutritious blend of rice and lentils, this one-pot wonder is incredibly easy to digest and endlessly customisable.
To make a monsoon special, start by tempering ghee with cumin seeds, asafoetida (hing), and a pinch of turmeric. Sauté ginger and green chillies before adding soaked rice and moong dal. Now, bring in the seasonal vegetables—think green peas, diced carrots, and potatoes. Add water, salt, and cook until everything is soft and beautifully melded together. A final dollop of ghee on top before serving is non-negotiable, elevating this simple dish to a sublime meal that feels like a warm hug on a plate. The key is to build layers of flavour in a single heavy-bottomed pot or pressure cooker. Begin by sautéing whole spices like bay leaves, cinnamon, cloves, and cardamom in oil or ghee until fragrant. Add thinly sliced onions and cook until they turn golden brown. Stir in ginger-garlic paste, followed by your choice of hearty monsoon vegetables. Diced potatoes, cauliflower florets, French beans, and sweet corn kernels work wonderfully. Add yogurt and powdered spices like turmeric, red chilli powder, and biryani masala, then fold in the soaked basmati rice. Add enough water, salt to taste, and a squeeze of lemon juice. Cover and cook until the rice is fluffy and has absorbed all the spices. Garnish with fresh coriander for a vibrant, satisfying meal.
Hearty & Healthy: Mixed Lentil and Vegetable Stew
For a dish that is both rustic and deeply nourishing, a mixed lentil stew, often called 'Dalma' in Eastern India, is an excellent choice. Corn on the cob, or bhutta, is a quintessential monsoon snack. This recipe transforms the street-side favourite into a fulfilling one-pot meal. The natural sweetness of fresh corn kernels shines against a backdrop of tangy and spicy flavours. In a pot, heat some butter or oil and sauté cumin seeds. Add chopped onions, green chillies, and ginger-garlic paste. Once the onions are soft, add fresh corn kernels—scraped directly from the cob for the best flavour—along with diced capsicum. Stir-fry for a few minutes before adding powdered spices like turmeric, red chilli powder, and a generous amount of chaat masala. Add soaked rice and water, season with salt, and cook until the rice is tender. A final squeeze of lime juice and a garnish of fresh coriander leaves brightens up the entire dish, making it a quick, flavourful, and memorable monsoon meal.
