Understanding the Controversy
In recent years, a narrative has taken hold that seed oils — a broad category including oils from canola, corn, sunflower, and soybean seeds — are a primary driver of inflammation and chronic disease. These claims often point to their high concentration
of omega-6 polyunsaturated fatty acids (PUFAs). It is true that some seed oils are very high in omega-6s, and a diet with a heavily skewed omega-6 to omega-3 ratio can contribute to inflammatory processes in the body. However, lumping all seed oils together ignores critical differences. Many experts argue that the problem isn't the oil itself, but its presence in ultra-processed foods, which are also high in sugar, sodium, and refined carbohydrates. The oil is just one ingredient in a much larger, less healthy picture.
Refined vs. Cold-Pressed: A Crucial Distinction
The single biggest factor determining an oil's quality is how it's made. Most common, inexpensive seed oils are refined. This industrial process uses high heat and chemical solvents like hexane to extract the maximum amount of oil. The oil is then often bleached to remove colour and deodorised to create a neutral flavour. This intensive processing strips the oil of many of its natural nutrients, such as vitamins and antioxidant polyphenols, that were present in the original seed. In contrast, cold-pressed oils are extracted mechanically at low temperatures (below 49°C) without chemical solvents. This gentler method preserves the oil's natural nutrients, flavour, and aroma, making it a nutritionally superior, albeit more expensive, product.
The Omega-6 to Omega-3 Balancing Act
Both omega-6 and omega-3 fatty acids are essential, meaning our bodies can't produce them and we must get them from food. The issue arises from their ratio in the modern diet. Many common seed oils, like corn, soybean, and standard sunflower oil, are loaded with omega-6s and contain very few omega-3s. A diet heavy in these oils can disrupt this delicate balance. However, not all seed oils fit this profile. Flaxseed oil, for instance, is one of the richest plant sources of the omega-3 fatty acid ALA. Studies have shown that consuming flaxseed oil can have protective effects against cardiovascular issues compared to high-omega-6 oils like sunflower oil. The key is not to eliminate omega-6s, but to ensure an adequate intake of omega-3s to keep things in balance.
Choosing Better Seed Oils
So, how do you navigate the oil aisle? Instead of a blanket ban, focus on variety and quality. For a potent dose of omega-3s, consider incorporating cold-pressed flaxseed or hemp seed oil into your diet, but use them for dressings or drizzling, not for cooking, as their nutrients are sensitive to heat. For general cooking, look for 'high-oleic' sunflower or safflower oils. These have been specifically cultivated to be high in monounsaturated fats (the same healthy fat found in olive and avocado oil) and are more stable at higher temperatures. Even common Indian cooking oils like cold-pressed groundnut and mustard oil offer a good balance of flavour and heat stability for everyday use.
Don't Forget the Smoke Point
Beyond nutrition, an oil's smoke point is a critical factor for healthy cooking. This is the temperature at which an oil begins to break down, smoke, and produce harmful compounds. Refined oils generally have higher smoke points because the compounds that would smoke have been stripped away. This makes them suitable for high-heat cooking like deep-frying. Cold-pressed oils typically have lower smoke points and are better for sautéing, low-heat baking, or as finishing oils. For high-heat Indian cooking like tadka, traditional choices like ghee or refined mustard oil are excellent due to their very high smoke points. Using an oil above its smoke point not only ruins the flavour but degrades its nutritional value.
