Quinoa, in particular, is a fantastic choice for a protein-rich vegetarian lunch. Compared to white rice, it contains significantly more protein and fibre, keeping you fuller for longer. In fact, quinoa is a complete protein, which means it provides all nine essential amino acids. Pulao, a flavourful rice and vegetable dish, is equally easy to prepare and can be customised with any vegetables you have on hand. Both meals deliver on flavour, nutrition, and speed.
Easy 15-Minute Quinoa Khichdi
This modern take on khichdi replaces rice with quinoa for a healthy boost. Using a pressure cooker is the key to getting this done in 15 minutes. Ingredients: 1/2 cup quinoa, 1/2 cup moong dal (yellow lentils), 1 small onion (chopped), 1 small tomato (chopped), 1/2 cup mixed vegetables (like peas, carrots, beans), 1 tsp ginger-garlic paste, 1/2 tsp turmeric powder, 1/2 tsp cumin seeds, 1 tbsp ghee or oil, salt to taste, and 3 cups of water. Instructions: First, rinse the quinoa and moong dal thoroughly. Heat ghee or oil in a pressure cooker and add the cumin seeds. Once they splutter, add the chopped onions and ginger-garlic paste and sauté for a minute. Add the tomatoes, vegetables, turmeric powder, and salt. Stir for another minute. Add the rinsed quinoa and dal, pour in the water, and stir well. Close the cooker and cook on high flame for 2-3 whistles. Let the pressure release naturally, and your nutritious khichdi is ready to be served.
Quick Veg Pulao in a Pressure Cooker
A fragrant and hearty vegetable pulao is the ultimate one-pot comfort meal. Again, a pressure cooker is your best friend for a 15-minute turnaround. Ingredients: 1 cup basmati rice, 1 tbsp ghee or oil, 1 small onion (sliced), 1 cup mixed vegetables (frozen or fresh), 1 tsp ginger-garlic paste, whole spices (1 bay leaf, 2 cloves, 1 small cinnamon stick), 1/2 tsp cumin seeds, salt to taste, and 1.5 cups of water. Instructions: Rinse the basmati rice and let it soak for 15 minutes while you prep. Heat ghee or oil in a pressure cooker, and add the cumin seeds and whole spices. Once fragrant, add the sliced onions and sauté until they turn light brown. Add the ginger-garlic paste and cook for a minute. Toss in the mixed vegetables and sauté for two minutes. Drain the rice and add it to the cooker, stirring gently. Pour in the water, add salt, and give it a final mix. Close the lid and cook on a medium-high flame for 1-2 whistles. Let the pressure settle before opening to fluffy, delicious pulao.
Tips for Success and Variations
To make hostel cooking even easier, a few hacks can go a long way. Always keep a small collection of essential spices like cumin seeds, turmeric, and garam masala. Using frozen mixed vegetables saves a lot of chopping time. You can boost the protein in your veg pulao by adding paneer cubes or a handful of soya chunks along with the vegetables. For the khichdi, a final dollop of ghee and a squeeze of lemon juice before serving elevates the flavour immensely.
