1. Protein-Packed Paneer Bhurji
Paneer Bhurji is the vegetarian answer to scrambled eggs and a fantastic way to get a protein boost. This North Indian dish involves crumbled paneer cooked with sautéed onions, tomatoes, and aromatic spices. It’s incredibly versatile; you can enjoy it on its
own, with a side of toast, or tucked inside a roti for a breakfast roll on the go. The key to making it in under 10 minutes is having your ingredients prepped. Keep chopped onions and tomatoes ready, and the actual cooking process is just a few minutes in the pan. Start by heating oil and adding cumin seeds. Sauté onions until translucent, then add tomatoes and spices like turmeric and chilli powder. Finally, stir in the crumbled paneer, cook for another two to three minutes until heated through, and it's ready to serve. Garnish with fresh coriander for an extra pop of flavour.
2. Healthy and Instant Oats Chilla
For a breakfast that is both healthy and incredibly fast, the Oats Chilla is a perfect choice. This savoury pancake is made from a batter of oats flour, besan (gram flour), and finely chopped vegetables. If you use quick-cooking oats, you don't even need to grind them; simply mix them with besan, water, and your favourite spices like cumin, turmeric, and chilli powder. To the batter, you can add grated carrots, finely chopped onions, capsicum, and fresh coriander to make it more nutritious and flavourful. Let the batter rest for a few minutes while your non-stick tawa heats up. Pour a ladleful of the batter onto the hot pan, spread it into a circle, and cook for a minute or two on each side until golden brown. These chillas are light, filling, and a great way to incorporate fibre and vegetables into your first meal of the day.
3. The Classic Comfort of Kanda Poha
Poha is a beloved breakfast staple across India for good reason: it’s light, delicious, and cooks in minutes. Made from flattened rice, this dish requires minimal cooking. The most popular version, Kanda Poha, is made with onions. The trick to perfect, fluffy poha is in the preparation of the flattened rice. Rinse the poha in a colander under running water for a minute until it softens, then let it drain completely. Over-soaking can make it mushy. In a pan, heat some oil, and add mustard seeds, curry leaves, and peanuts, sautéing until fragrant. Add chopped onions and cook until translucent. Sprinkle in some turmeric, add the drained poha and a little salt, and gently mix everything together. Cover and let it steam for two to three minutes. A final squeeze of lemon juice and a garnish of fresh coriander and sev completes this classic breakfast.
4. Speedy Besan Chilla
Similar to the oats chilla but even simpler, the Besan Chilla (or cheela) is a savoury pancake made purely from besan (gram flour). It's a protein-rich, gluten-free option that can be on your plate in 10 minutes. The batter consists of besan, water, and a mix of spices such as ajwain (carom seeds) for digestion, turmeric, and red chilli powder. Finely chopped onions, tomatoes, and green chillies are often added directly to the batter for texture and flavour. Whisk everything into a smooth, pourable consistency. Heat a pan, grease it lightly with oil, and pour on the batter, spreading it thin. Cook for a couple of minutes per side until it's cooked through and has golden-brown spots. It’s a wonderfully simple and satisfying meal, often served with a side of mint chutney or yogurt.
5. Quick Rava Upma
Rava Upma, a savoury dish made from semolina (sooji), is another cornerstone of quick Indian breakfasts. While some recipes can be more elaborate, a basic and delicious version can easily be prepared in under 15 minutes. For the fastest results, use pre-roasted rava or give it a quick dry roast yourself for a couple of minutes until fragrant. In a separate pan, prepare a tempering of mustard seeds, urad dal, chana dal, and curry leaves in hot oil. Sauté chopped onions and green chillies until soft. Add hot water to the pan along with salt and bring it to a rolling boil. Lower the heat and slowly add the roasted rava while stirring continuously to prevent lumps. Once all the rava is incorporated, cover the pan and let it cook on low heat for about 3-5 minutes, allowing the semolina to absorb the water and become fluffy.
