A Modak for Every Palate
Modak, Lord Ganesha's favourite sweet, comes in many delicious forms, each with its own unique texture and shelf life. The most traditional is the Ukadiche Modak, a delicate dumpling with a soft, steamed rice flour shell and a sweet coconut-jaggery filling.
Then there is the Talniche Modak, or fried modak, which features a crispy outer layer made from wheat or plain flour, offering a delightful crunch. Another popular variety is the Mawa Modak, a rich, melt-in-the-mouth sweet made from khoya (milk solids) that requires no steaming or frying. Understanding the differences between these types is the first step to mastering their preparation and, more importantly, their storage.
Mastering the Classic Ukadiche Modak
The key to a perfect Ukadiche Modak lies in its soft, pliable outer covering. Using a fine, good-quality rice flour is crucial. The dough should be kneaded while it is still hot to achieve a smooth, crack-free texture. When it comes to the filling, using fresh coconut and good quality jaggery makes a significant difference in taste. Cook the coconut and jaggery mixture until it is moist but not watery; overcooking can make it hard. Be careful not to overstuff the modaks, as this can cause them to break during steaming. A steaming time of 10-15 minutes is usually perfect to cook them through without making them dry or sticky.
The Art of Storing Steamed Modaks
Ukadiche Modaks are best enjoyed fresh and warm, often with a drizzle of ghee. However, if you have leftovers, they can be stored. At room temperature, they will only last for about a day in an airtight container. For longer storage, refrigeration is necessary. Place the cooled modaks in an airtight container in the fridge, where they can last for up to 2-3 days. The cold will harden the rice-flour shell, so they will need to be reheated before serving. The best way to do this is to steam them again for 5-7 minutes, which will restore their softness. Microwaving is an option, but it can sometimes make them chewy.
Keeping Fried and Mawa Modaks Fresh
Fried modaks have a significantly longer shelf life than their steamed counterparts. Thanks to their crispy, fried shell, they can be stored in an airtight container at room temperature for 2-4 days. It is generally not recommended to refrigerate fried modaks, as the moisture can make them lose their crunch. To get ahead of festival preparations, the filling can be made a couple of days in advance and refrigerated. Mawa modaks, being a dairy-based sweet, should be handled with care. They can be kept at room temperature for 1-2 days. For longer freshness, store them in an airtight container in the refrigerator for up to a week. Like other refrigerated sweets, it's best to let them sit at room temperature for about 10-15 minutes before serving to soften them and enhance their flavour.
Make-Ahead and Freezing Tips
For those who like to plan, modak-making can be done in advance. A fantastic trick for Ukadiche Modak is to prepare and shape the dumplings completely, but freeze them before steaming. Arrange the unsteamed modaks on a plate, freeze them for about an hour until firm, and then transfer them to a freezer-safe airtight container. They can be stored for up to two months this way. When you are ready to serve, you can steam them directly from frozen (adding a few extra minutes to the steaming time) or after thawing them for about 15 minutes at room temperature. This ensures you can serve perfectly soft, fresh-tasting modaks with minimal last-minute effort.
