The craving for a crunchy, savoury snack is universal, but the guilt that follows a bag of greasy chips can be just as common. What if you could indulge without the downside? Enter homemade roasted makhana and chickpeas.
The Problem with Packaged Chips
Store-bought potato chips are a popular
go-to for a reason: they are crispy, salty, and incredibly convenient. However, that convenience often comes at a nutritional cost. Most commercial chips are deep-fried in industrial oils, loading them with unhealthy fats and calories. A single ounce can contain nearly 10 grams of fat and 150 calories with very little nutritional value in return. They are also typically high in sodium, which can contribute to high blood pressure and other health issues when consumed in excess. Furthermore, the high-temperature frying process can create a harmful compound called acrylamide, a known carcinogen. This combination of high fat, high sodium, and low nutritional density makes them a less-than-ideal choice for regular snacking.
Makhana: The Low-Calorie Superfood Puff
Makhana, or fox nuts, are the puffed seeds of the lotus flower and have been a staple in Indian diets for centuries. They are naturally low in calories and fat, making them an excellent alternative to fried snacks. Nutritionally, makhana is a powerhouse, rich in protein, fibre, and essential minerals like magnesium, potassium, and calcium. The high fibre content aids digestion and promotes a feeling of fullness, which can help prevent overeating and support weight management. Unlike potato chips, which offer mostly empty calories, makhana provides sustained energy and valuable nutrients, making it a truly guilt-free indulgence.
Easy Roasted Makhana at Home
Making your own roasted makhana is incredibly simple and takes less than 20 minutes. For a basic recipe, heat a pan or preheat your oven to about 150°C. Toss the makhana with a teaspoon of ghee or your preferred oil until lightly coated. You can also dry roast them without any oil. Roast them, stirring frequently in a pan or tossing once in the oven, for 10-15 minutes until they are crisp and crumble easily when pressed. Once they are crunchy, turn off the heat and add your seasonings. A simple mix of salt and pepper is classic, but you can get creative with chaat masala, turmeric, or peri-peri spice for more flavour. Allow them to cool completely before storing in an airtight container to maintain their crunch.
Chickpeas: The Protein-Packed Powerhouse
Chickpeas, also known as garbanzo beans, are another fantastic base for a healthy, crunchy snack. They are packed with plant-based protein and dietary fibre, a combination that provides lasting energy and promotes satiety. A 100-gram serving of roasted chickpeas can offer a staggering 18-20 grams of protein and an impressive amount of fibre. This high-fibre content is great for digestive health and helps stabilize blood sugar levels. Compared to potato chips, roasted chickpeas have significantly less fat and three times more protein and fibre, making them a nutritionally superior choice for satisfying your snack cravings.
Simple Roasted Chickpeas Recipe
To make roasted chickpeas, start with a can of chickpeas, rinsed and drained. The key to getting them crispy is to pat them completely dry with a towel; remove any loose skins for a better texture. Preheat your oven to around 200°C (400°F). Toss the dry chickpeas in a bowl with a tablespoon of olive oil and your favourite spices—cumin, smoked paprika, garlic powder, and a pinch of salt are a great combination. Spread them in a single layer on a baking sheet and bake for 30-40 minutes, shaking the pan every 10-15 minutes, until they are golden brown and crunchy. Let them cool before enjoying. They are perfect on their own, as a salad topper, or mixed into a trail mix.
