From Platter to Picture-Perfect Board
The kebab has a rich history in India, evolving from rustic grilled meats to refined culinary art under royal patronage, especially during the Mughal era. Over centuries, it adapted to regional tastes, and crucially, embraced vegetarianism. Today, on World
Kebab Day, we are moving beyond simply arranging a few types of kebabs on a plate. The global trend of 'snack boards' or 'grazing platters' is changing the game. Unlike a traditional platter, a snack board is a curated, artfully arranged spread that invites guests to graze and interact. It’s a feast for the eyes and the palate, combining diverse flavours, textures, and colours to create an experience rather than just a starter.
The Stars of the Show: Vegetarian Kebabs
The heart of your board will be a vibrant selection of vegetarian kebabs, showcasing the incredible diversity India has to offer. Go beyond the usual with a mix of textures and flavours. Include classics like soft, melt-in-your-mouth Dahi Ke Kebab, made from spiced yoghurt, and the ever-popular Hara Bhara Kebab, packed with spinach and green peas. Add chunks of robust Paneer Tikka, marinated in spices and grilled to perfection. For a more contemporary touch, consider kebabs made from raw jackfruit (kathal), soya, or sweet potato, which bring unique tastes and textures to the board. The goal is to offer a variety that caters to every palate.
Essential Dips and Chutneys
No kebab is complete without its accompanying dips. A great snack board offers a trio of choices to complement the different kebabs. A classic mint-coriander chutney is non-negotiable, providing a fresh, zesty kick. Alongside it, a sweet and tangy tamarind chutney adds a different flavour dimension. For a creamy, cooling contrast, a simple yoghurt dip infused with garlic, roasted cumin, and a pinch of salt works wonders. Placing these in small bowls on the board acts as an anchor for your arrangement.
Building Character with Crunch and Colour
What elevates a platter to a board is the variety of surrounding elements that add texture and visual appeal. Fill the gaps between your kebabs and dips with an assortment of colourful and crunchy bites. Fresh vegetable sticks like cucumber and carrots provide a refreshing crunch. Lachha pyaaz (pickled onion rings) are a classic pairing that add a sharp tang. For more texture, include a bowl of roasted and spiced nuts, some crispy chakli, or mini baked samosas. Even some papads broken into scoopable pieces can add a fun, crunchy element.
Assembling Your Culinary Masterpiece
Arranging the board is where the magic happens. Start by placing your chutney bowls strategically on the board. Next, arrange the different types of kebabs in flowing lines or clusters around the bowls. Let them be the main feature. Then, fill in all the empty spaces with your supporting cast: the vegetable sticks, nuts, and other crunchy snacks. Play with colours and shapes, ensuring no two similar items are right next to each other. The final look should be one of abundance and thoughtful composition. It’s a creative process that results in a stunning, shareable centrepiece that will have your guests talking and, more importantly, grazing happily.
