While the dal cooks, prepare a 'tadka' or tempering. Heat ghee or oil in a small pan, and sizzle cumin seeds, minced garlic, dried red chillies, and a pinch of asafoetida (hing) until fragrant. Simply soak moong dal for a couple of hours, then blend it with ginger, green chillies, and a little water to form a smooth batter. Season with salt and turmeric. To cook, pour a ladleful of batter onto a hot, lightly-oiled tawa and spread it into a thin circle, much like a dosa. You can make them plain or add a filling of grated paneer, chopped onions, and capsicum for a more substantial meal. To make it, heat ghee in a pressure cooker, add cumin seeds, ginger, and turmeric. Sauté for a moment before adding rinsed rice and dal, along with water and salt. For extra nutrition, you can add finely chopped vegetables like carrots, peas, and potatoes. Let the pressure cooker work its magic, and in about 15-20 minutes, a wholesome, balanced meal is ready. Serve it with a dollop of ghee, plain curd, and a crisp papad on the side.
