The Smoke Point Showdown
A key reason for the switch is performance under pressure, specifically, high-heat cooking. Every oil has a 'smoke point', the temperature at which it begins to break down and burn. When an oil passes this point, it not only creates a terrible taste but
can also release harmful compounds. Ghee boasts a very high smoke point of around 250°C, making it extremely stable for Indian cooking techniques like tadka, searing, and frying. In contrast, while some refined seed oils have high smoke points on paper, they can degrade more quickly under heat.
A Closer Look at Seed Oils
For decades, seed oils like sunflower, soybean, and canola were marketed as modern, 'heart-healthy' alternatives. However, a growing wellness conversation is questioning that narrative. As it is clarified butter with the milk solids removed, it is also virtually lactose-free, making it suitable for many with dairy sensitivities.
