make this dish, heat a tablespoon of oil in a pan and add cumin seeds. Once they sizzle, add finely chopped onions and sauté for a couple of minutes until they become translucent. Follow with chopped tomatoes, ginger, and green chillies. As the tomatoes soften, add your spices: a pinch of turmeric powder, red chilli powder, and a little garam masala. The final step is to add crumbled paneer. You can use store-bought paneer; just crumble it before you start cooking. Mix everything well, cook for another two to three minutes until the paneer has absorbed the flavours, and garnish with fresh coriander. Serve it hot with whole-wheat toast or a roti for a complete and satisfying meal that will keep you energised until lunch.
Fibre-Rich Oats Chilla
For a healthy, gluten-free, and fibre-rich breakfast, look no further than Oats Chilla. These savoury pancakes are light, easy to digest, and incredibly versatile. The quickest way to make them is by using quick-cooking oats. Simply grind the oats into a fine powder using a grinder. In a mixing bowl, combine the oat flour with besan (gram flour), which helps in binding. Add finely chopped vegetables like onions, carrots, and capsicum for extra nutrition and crunch. Season the batter with salt, turmeric, cumin seeds, and chopped green chillies. Add water gradually to form a smooth, lump-free batter with a pouring consistency, similar to a dosa batter. A flavourful Kanda Poha can be ready in under 10 minutes with a few smart steps. Start by rinsing thick or medium poha in a colander under running water and let it drain; this softens it without making it mushy. While it rests, heat oil in a pan and add mustard seeds. Once they pop, add peanuts, curry leaves, and chopped onions. Sauté until the onions are soft. Add a pinch of turmeric, then gently fold in the softened poha. Make sure to mix it gently so the flakes don't break. Add salt to taste and a pinch of sugar to balance the flavours. Cover and cook on low heat for just two minutes, allowing the poha to steam and absorb the spices. Finish with a generous squeeze of lemon juice and a garnish of fresh coriander and grated coconut if you like.
