Also known as pitaya, dragon fruit is the fruit of a cactus plant native to Central and South America. Its flavor is surprisingly mild, often described as a cross between a kiwi and a pear. There are a few main varieties you'll encounter. The most common
has bright pink skin with white flesh, which has the mildest taste. Another popular type has the same pink skin but with a stunning, deep red or magenta flesh, which tends to be sweeter with a hint of berry flavor. There's also a yellow-skinned variety with white flesh, which is generally considered the sweetest of all.
How to Prepare Dragon Fruit
Despite its dramatic appearance, preparing a dragon fruit is simple. The leathery skin isn’t edible but is easy to remove. The quickest way is to slice the fruit in half lengthwise. From there, you can use a large spoon to scoop out the flesh in one piece, similar to an avocado. Alternatively, after halving it, you can cut each half into wedges and simply peel the skin away with your fingers—it separates easily from the flesh when ripe. You can then cube it, slice it, or use a melon baller for perfectly round spheres. The tiny black seeds are completely edible and provide a light, crunchy texture.
