Stir in rinsed rice and moong dal, turmeric, and a touch of red chilli powder. Add water, pressure cook until soft and beautifully mushy, and serve hot with a dollop of ghee, some pickle, and a roasted papad on the side. The Tangy Classic: Punjabi Kadhi Pakora
When the skies are grey, a bowl of bright yellow Kadhi Pakora can feel like sunshine. This beloved Punjabi dish features soft, fried gram flour dumplings (pakoras) swimming in a tangy, creamy yogurt-based gravy (kadhi). The process is twofold but deeply rewarding. First, prepare your pakoras by making a thick batter of gram flour (besan), onions, green chillies, and spices, and frying them until golden. For the kadhi, whisk together sour yogurt and more besan until smooth, then add water, turmeric, and salt. Simmer this mixture gently, stirring continuously, until it thickens into a silky gravy. Finally, let the fried pakoras soak in the warm kadhi, absorbing all the tangy goodness. A final tempering of ghee, mustard seeds, and dried red chillies poured over the top makes it irresistible. Monsoon is corn season, and there’s no better way to enjoy it than in a steaming bowl of soup. An Indian-spiced corn soup is both light and incredibly flavourful, perfect for a weeknight when you want something satisfying but not heavy. Start by sautéing onions, ginger, and garlic in a little butter or oil. Add spices like turmeric and a hint of cumin, then toss in fresh corn kernels and other finely chopped vegetables like carrots and beans. Pour in water or vegetable broth and let it all simmer until the vegetables are tender. For a creamy texture, you can blend a portion of the soup and add it back to the pot. A squeeze of lime and a garnish of fresh coriander at the end cuts through the sweetness of the corn, creating a perfectly balanced and warming bowl of comfort.
The Healthy Pancake: Moong Dal Cheela
For a dinner that is both cosy and light, moong dal cheela is an excellent choice. These savoury pancakes are made from a batter of soaked and ground yellow moong lentils, making them packed with protein and naturally gluten-free. Simply soak the lentils for a few hours, then grind them into a smooth batter with ginger, green chillies, and a little water. To this, you can add finely chopped onions, carrots, or fresh coriander. Heat a tawa or non-stick pan, pour a ladleful of batter, and spread it into a thin circle, much like a dosa. Cook with a little oil until golden and crisp on both sides. These cheelas are delicious on their own or can be stuffed with crumbled paneer or cheese for an even more filling meal. Serve them hot off the pan with a side of mint chutney.
The Ultimate Pairing: Aloo Paratha and Ginger Chai
Some evenings, only the most classic combination will do. Hot, fluffy aloo parathas paired with a cup of strong, spicy ginger tea is less a meal and more of a feeling. The parathas—whole wheat flatbreads stuffed with a savoury filling of mashed potatoes, onions, coriander, and spices—are pan-fried with ghee until golden brown and crisp in spots. While the parathas are cooking, brew a pot of adrak chai by simmering water with crushed ginger, tea leaves, and your preferred spices like cardamom or black pepper before adding milk and sugar. The spicy warmth of the tea is the perfect counterpoint to the soft, flavourful paratha.
