[17, 22, 24] Our vegan version bypasses the dairy and long cooking times, offering a plant-based alternative that captures the essence of kulfi without the heaviness. The secret to this recipe's luscious texture lies in cashews. When soaked and blended, cashews transform into an incredibly rich and smooth cream, perfectly mimicking the consistency of slow-cooked dairy. This nut-based milk provides healthy fats and a subtle, sweet flavor that forms the ideal base for our kulfi. Unlike traditional versions that can be high in saturated fats from heavy cream and condensed milk, this cashew base offers a lighter profile. The Recipe: Your Guilt-Free Midnight Treat
This no-cook recipe is incredibly simple and doesn't require an ice cream maker. **Ingredients:** - 1 cup raw, unsalted cashews, soaked in hot water for at least 1 hour (or overnight in cold water) - 1 can (400ml) full-fat coconut milk, chilled - 1/2 cup almond milk or another plant-based milk - 1/4 to 1/3 cup maple syrup or agave nectar (adjust to your sweetness preference) - 1/2 teaspoon ground cardamom - A generous pinch of saffron threads (about 15-20 strands) - 2 tablespoons chopped pistachios for garnish (optional) **Instructions:** 1. Drain the soaked cashews thoroughly. 2. In a small bowl, steep the saffron threads in two tablespoons of warm almond milk for about 10 minutes to release their color and flavor. [15] 3. In a high-speed blender, combine the drained cashews, full-fat coconut milk, the remaining almond milk, your chosen sweetener, and ground cardamom. Blend on high until the mixture is completely smooth and silky, with no grit from the cashews remaining. 4. Add the saffron-infused milk to the blender and pulse a few times to incorporate it. 5. Pour the mixture into kulfi molds, popsicle molds, or even small paper cups. [6] 6. If desired, sprinkle the tops with finely chopped pistachios. 7. Customise Your Kulfi
